I was a general manager at a Five Guys for several years. Cutting and prepping the potatoes is no joke. We would usually cut 4-6 bags in the morning and maybe some more before dinner

Well ya'll were doing it all wrong....you need to wash every potato by hand....that means scrubbing each potato by hand.

At our location we cycle the potatoes through the veggie wash usually 3-4 times until all starch is gone than we transfer into another sink where they will be constantly agitated through out the day! Great video!

I worked at Five Guys Berlin-Alexanderplatz and I washed the fries at least 2 times to remove all the starch. Probably there is to much in there.....(and not should be)

I rarely go to five guys which I haven’t been there in so long but I do love it! My question is the why do you guys put so many fries in the bucket? When I got my food, there were so many fries and fries kept spilling out because they were overloaded! I do love your the fries, though! I just wonder why you guys put so many in the carton or whatever it’s called

after you prep the fries, how are they stored before being fried? don't fries need to be stored in water to prevent browning?

Yes fries are washed until the starch is gone and the water is clear. He should have filled the first wash sink up first so the fries were washing while he cut them to get rid of the starch. The way he did them he would have to fill up that second sink and drain the water until it's clear. If they are stored in water for too long they will start to become slimy and will be thrown away. On the other hand if they are left out of water for too long they will start to turn brown and then black after long enough.

Gloves are only required in restaurants for prepping RTE or ready to eat foods like lettuce that don't get cooked before serving. The fries are cooked in 345 degree peanut oil before serving and gloves are required while doing the cooking.

no need for gloves, the fries will be cooked in a deep fryer at 325 to 375 degrees afterwards, so there's no risk of a customer getting sick
