I actually HATE leftovers, so I process and store single ingredients, then use those same ingredients throughout the day. Today, I had some bell peppers getting wrinkly, so I thinly sliced them and put some on my avocado toast at breakfast, and my tofu stir-fry for lunch. They’ll be featured in my chickpea rice bowl for dinner too!
