Fun fact, Hot Sauce (and Mexican Salsa included) is the number one condiment in the US now surpassing ketchup a few years ago. Hot sauce became so popular that there dozens of variety you can find at most supermarkets. The supermarkets will usually carry about 6 Mexican company hot sauce that probably come in 10 varieties. Then they carry a handful of Louisiana Hot Sauces. Then at least 2 or 3 Asian hot sauces. Then a handful of higher end niche hot sauces

I'm one of those weirdos that prefers no sauce on things like fries and chicken. Just some mustard on a burger, maybe some mayo. Oh and if I'm having fish n chips I'll gladly dip my fries in the tartar sauce

When I first learned English, I remembered how I am utterly confused that ketchup means something that is totally different than "kecap" (pronounced almost exactly the same) in my language - which is another type of sauce/condiment that is common here in my country. Kecap here usually means soy sauce (either sweet or salty), although there are other variations as well such as fish sauce, and interestingly there's also "English kecap" which is actually Worcestershire sauce. Here, the local language for ketchup translated literally to English is just "tomato sauce". Interesting to learn how the actual item that the word represents changed throughout history!

Yeah, "tomato sauce" is a totally different thing, and actually the base for ketchup, so that's weird. What do they call actual tomato sauce? But as this video explains, American ketchup originated from the Asian kôe-chiap or kê-chiap. I've seen videos on this years ago, and it really is interesting how it evolved from a fish and other meat and scrap sauce, into what it is today.

Look up mushroom ketchup, that was the classic british one before the rise of tomato ketchup in the early 19th century. And in the early times it was even specifically mentioned when it was made from tomatoes. And in the Philippines during WWII they came up with banana ketchup.

The idea Asia had to teach Brits how to make a fish sauce is absurd. The Romans had sophisticated garum factories in Britain, Spain and Portugal before 100AD. It was common until the late 1700's, although decreasing in popularity decade after decade until Lea and Perrins revived the tradition. The American south had tomatoes. It was first made into CATSUP in the middle 1700s according to American recipes...very much in line with your Mushroom Catchup. The key to turning the American Indian gift of tomatoes into a lasting sauce was vinegar...distilled vinegar was unknown in the Western Hemisphere. The Indians had everything else.

I consider Heinz to be a known baseline. It might not be the best ketchup, but it's far from the worst. And available basically everywhere. Obviously if you find a better local brand, go for that.

Chips/French Fries and mayonnaise are seriously underrated in my part of the world. I get weird looks from other diners here in the USA when they see me dipping my fries into the white stuff, but they're just missing out on one of the best culinary combos around. (And no, I don't hate catsup on fries -- sometimes it really hits well for me, but I prefer mayo -- or even better, fry sauce, which is mayo, catsup, and sometimes Worcestershire sauce, yellow mustard, and/or other condiments, along with maybe paprika or Cayenne pepper.)

I support your right to make your own ketchup. I think it is a practical alternative to the China tomato. Thank you for doing this documentary. I may switch to mustard instead. If I see your Timecapsule ketchup on the shelves I may give it a try. I had no idea they used lead and sawdust and anchovies in ketchup. I always thought they used tomatoes and vinegar and sugar and maybe onions?
