Tomato ketchup is synonymous with American cuisine, and a bottle of Heinz can be found in homes and restaurants all across the world. In this video, Andy is looking into how one man used this condiment that originated in Asia, travelled to the US and then transform the food industry of America, and then turned his company Heinz into a globally recognised name.

22:03 This legendary sweet-spicy sauce from Thailand is called “Nam Jim Kai” (น้ำจิ้มไก่) or literally “The Chicken Sauce” because it’s always paired with fried or roasted chicken.

When I first learned English, I remembered how I am utterly confused that ketchup means something that is totally different than "kecap" (pronounced almost exactly the same) in my language - which is another type of sauce/condiment that is common here in my country. Kecap here usually means soy sauce (either sweet or salty), although there are other variations as well such as fish sauce, and interestingly there's also "English kecap" which is actually Worcestershire sauce. Here, the local language for ketchup translated literally to English is just "tomato sauce". Interesting to learn how the actual item that the word represents changed throughout history!

I'm one of those weirdos that prefers no sauce on things like fries and chicken. Just some mustard on a burger, maybe some mayo. Oh and if I'm having fish n chips I'll gladly dip my fries in the tartar sauce

Fun fact, Hot Sauce (and Mexican Salsa included) is the number one condiment in the US now surpassing ketchup a few years ago. Hot sauce became so popular that there dozens of variety you can find at most supermarkets. The supermarkets will usually carry about 6 Mexican company hot sauce that probably come in 10 varieties. Then they carry a handful of Louisiana Hot Sauces. Then at least 2 or 3 Asian hot sauces. Then a handful of higher end niche hot sauces

The idea Asia had to teach Brits how to make a fish sauce is absurd. The Romans had sophisticated garum factories in Britain, Spain and Portugal before 100AD. It was common until the late 1700's, although decreasing in popularity decade after decade until Lea and Perrins revived the tradition. The American south had tomatoes. It was first made into CATSUP in the middle 1700s according to American recipes...very much in line with your Mushroom Catchup. The key to turning the American Indian gift of tomatoes into a lasting sauce was vinegar...distilled vinegar was unknown in the Western Hemisphere. The Indians had everything else.

Chips/French Fries and mayonnaise are seriously underrated in my part of the world. I get weird looks from other diners here in the USA when they see me dipping my fries into the white stuff, but they're just missing out on one of the best culinary combos around. (And no, I don't hate catsup on fries -- sometimes it really hits well for me, but I prefer mayo -- or even better, fry sauce, which is mayo, catsup, and sometimes Worcestershire sauce, yellow mustard, and/or other condiments, along with maybe paprika or Cayenne pepper.)

I've heard of fry sauce and I'm up for trying it, but it's not that common in my part of the Midwest. I think it's more common in the Mountain states.

Its funny because in Canada it got widely boycotted because they closed their factory in canada to export the labor to a cheaper country. A lot of people switched to French's.

I prefer the competition or supermarket versions I find they are either the same as Heinz or even better and obviously much cheaper. The days of buying brand names (at least in my household) is over

You gotta start eating Honey dill, based out of Winnipeg! One part honey to two parts mayonnaise, and add in a bunch of dill! Its as sweet as ketchup but with awesome dilliness!

I support your right to make your own ketchup. I think it is a practical alternative to the China tomato. Thank you for doing this documentary. I may switch to mustard instead. If I see your Timecapsule ketchup on the shelves I may give it a try. I had no idea they used lead and sawdust and anchovies in ketchup. I always thought they used tomatoes and vinegar and sugar and maybe onions?

These days, as an American, I eat ketchup usually only with fries and some burgers. That’s it. I don’t NEED it on burgers BUT I can’t enjoy fries without ketchup

Curry ketchup > tomato ketchup Edit: you mentioned curry was more popular in Belgium and it's true I'm Belgian lol Sidenote: in Belgium and Netherlands McDonald's has a sauce called frietensaus or zoete mayonaise. It's way better than anything with fries

Heinz may have taken over America, but any proper Canadian wouldn't touch the stuff after Heinz unexpectedly decided to pull out of Leamington, Ontario. leaving 600 people suddenly unemployed. French's stepped in and put them back to work where it makes the true ketchup of Canada, and fortunately it's actually better than Heinz IMO...and many other's. I won't have a Heinz product in my home.
