Honestly, with Heavy Starfists +10, Cragblade, Flame Grant Me Strength, Golden Vow, high poise, and good stats you could do most of this too. It's a monstrous build as long as you know how to get close to bosses.

10:56 I only noticed it when I finally played DS2 but I think it's true of all the games, if your stamina is completely drained, you can't sprint again until it fills all the way up

Correct! That's why in DS speedruns the "strat" is to run until your stamina is aaaaalmost depleted, but not completely, walk, wait for it to fill back up again and then run :)
