you sure know how to get the sweet spot of a light-taste coffee. correct pouring time (weight of coffee (g) x 2 or 3 = pouring secs interval) + even shoreline.

I got the same grinder too bro. Gotta say, sifting the ground coffee makes it much better as the grinder produces too much fines. By doing that, I can also grind it a few clicks finer, making the grinds more consistent. I just use a kitchen/tea strainer. Nothing special

Sounds like a great business idea haha. If you're open to drinking more than black coffee, you can try different "coffee recipes" including different kinds of lattes (honey oat milk latte, caramel latte), and different brewing methods too like french press, espresso, aeropress, etc.
