In this cake decorating tutorial, I demonstrate how to create create a gorgeous, super tall wedding worthy cake and how I prep and arrange fresh flowers. This cake was to be delivered and consumed on the same day, so I popped these flowers on last minute, just before heading down to the venue.

In these video tutorials, I normally use Bakels Premixes to save on time.

I LOVE your cakes and videos but I do have a question... Do you concern yourself about using non edible flowers? How do you protect your cakes from any poisonous liquid coming from them? I understand baby breath is one of those flowers...

Cover the stem of a flower with drinking straw....easier to push in the stem as well and saving it from getting in contact with the poisonous or non poisonous liquid as well

Have anyone tried cling wrap? I use floral tape to put some flowers n leaves together n I wrap it around with food cling wrap. Just make sure you cling wrapped tightly that when the flowers are removed the cling wrap doesn't stay inside the 🍰

absolutely stunning. I love how you made the gold layer so extra and used the small tier for flower sticking. Gorgeous . I bet that weighed a ton!

thank you for the awesome comment lovely! hahah yea, it really did! We couldn't find the venue, I had to stop at 2 different restaurants and put the cake down twice, my arms were jelly! Who needs a gym membership when you can just transport larger than life cakes for a living.

I'm really confused about using real flowers on cakes. I've seen so many other videos where they say you need to use edible flowers or protect the stems with flower tape or other method so that the liquid from the flowers doesn't touch the cake or seep into it. They've also said that baby's breath are dangerous to use! Please help, this is very confusing :(

The flowers shouldn't touch the cake, either take straws or a food grade wax seal Maybe I am mistaken, but she isn't a trained baker

I must say I watched that too and was thinking “the weeping stems of all those flowers are pressing against the fondant”. I guess if you were to copy this cake you would just tell the customer that the small 4” tier was not edible?

I agree, I keep reading that you shouldn't really use them at all and yet I've seen lots of videos of decorators using toxic flowers. I'm so confused.

Another great way to protect the cake from the flowers especially as most flowers have pesticides on them would be to cut a circle of acetate and have that as the barrier between the fondant of the bottom cake and the petals, and to definitely wrap and places flower stems into flower picks before plunging them into the separating cake. Babys breath is definitely toxic and should never be used on cakes.

Such a beautiful design! Do you consider the toxicity of the flowers when choosing? I know that the gyp is considered toxic, how would you safeguard against this?

Vicky Claringbull a lot of the time they put straws of something long and hollow to put the stem in. It usually doesn’t touch the cake.

I wire all my flowers like here on this video but i use flowers picks - fill the picks with a little fondant, stick the wired flowers in - and push the pick into the cake - wires dont touch cake. Id never use flower tape etc and push wires directly into cake.

Foodsafe wax is the safest option as a barrier between flowers and the cake/icing. (all flowers and greens that are not organic will have pesticide and should not come in contact with foods)

wonderful! One question: do you wash the flowers before using them on the cake? sometimes they can have tiny little insects or just dirt that could ruin the cake

thank you so much! Yes, that's definitely recommended. you can let them sit to dry on a hand towel and gently dot them dry with it.

Hi Kate, thank you! I used 1.5 kilos of ganache and approximately 2.5 cups of my hybrid buttercream frosting (which is basically just American frosting with half butter and half vegetable shortening). I had a little left over, maybe 3 tablespoons or so after this project.

Beautiful cake Rosie. Can you please do a video especially on how to use premixes and ratios on various pan sizes which is a real struggle for us. The 12.5kg bag comes with only one standard recipe which is not really useful. Thanks in advance

This is beautiful! I keep reading that gypsophila (baby's breath) are toxic and should not be used on cakes? Are they safe?

Thank you so much hun :) It's important that the stems of any flowers, toxic or not, do not make it to the inside of the cake / pierce through the fondant. On this cake, I knew I was going to remove the fondant completely when I cut it and served it, so I didn't really take precautions. However, if you would like to take extra precautions, you can always wrap up the stem in plastic wrap before applying it to the cake. Thank you for raising this! xx

muchas gracias por tu hermoso comentario querida! Cuando el fondant se agrieta, generalmente se debe a que no es lo suficientemente flexible o elástico. Esto sucede si ha estado sentado durante demasiado tiempo en el mostrador o sobre el pastel, si la temperatura en la habitación es demasiado fría, o si el fondant está demasiado seco por amasar demasiado azúcar glas o maíz. Intente trabajar rápidamente con su fondant, usando manteca vegetal como su agente antiadherente, e incluso caliente el fondant ligeramente en el microondas para ayudar a que sea más elástico. ¡Espero que esto ayude!

hey hun, I eye balled this, although from memory, it was approximately 2 cups of hybrid buttercream that went into ganache, the ganache being 600grams cream and 1200 grams of dark chocolate ganache :)

hi lovely! I would recommend Rolkem brands. In this tutorial, I have a feeling I would have used the Creative Cake Decorating brand in Champagne Gold :)

thank you! These were all Bakels premixes. I have Mississippi mud cake and White Choc Mud. I added in some butterscotch flavouring by Roberts into the white mud base :)

How do you cut the cake(bottom)?

Hi Laura, you would treat this as 2 different cakes. Since there is a cake board in the middle, you would cut down until the knife hits the boards, and start cutting slices as you normally would, acting as though that board was the plate on the table. Once all the cake is gone from that board, you would simply remove it, take out the dowels or bubble tea straws, and keep cutting as per usual.

Can you tell us how we’re supposed to clean/prep the flowers so that they are food safe? Are there any flowers that should be avoided?

That is a brilliant question kgbn1. I honestly wouldn't be able to tell you off the top of my head which flowers should be avoided, but I know carnations, roses and chrysanthemums are not on that list. If you are using flowers on your cake, it would be best to do a quick google research on those particular flowers beforehand. In terms of prep, you can wash the flowers under cold water and gently pat them dry. You can go one step further and place baking paper under them as a barrier between the flowers and the cake :)
