I love you all!!!! I hope you enjoy another easy and delicious recipe! Seriously the best now if you don’t want to use pancake mix you can use 1 1/2 cups sifted flour 1 1/4 cups milk 2 eggs 6 tbsp melted butter 4 tsp vanilla 1/2 tsp salt 1 tbsp sugar 1/2 tsp cinnamon I personally like the pancake mix better but either way crepes are delicious to enjoy any time! Why make her spend the money to PRINT a Cookbook?...she's doing it NOW on VIDEO. I was a Printer for 40 YEARS, there's ZERO need to print books anymore...especially COOKING, you can watch the techniques needed IN THE VIDEO, she has probably over 100 cooking videos...go check her channel for what you're looking for.

I just made these tonight but only used half the recipe as I only wanted to make a few crepes. The first one was a pan-crepe and fell apart. lol I think my batter was too wet so I added two more tablespoons of the Hungry Jack pancake mix. What a difference it made! The crepes came out beautiful and they were delicious! My son wanted seconds. Thank you so much for sharing, Claudia!

You need to wisk in the milk more vigoriously to really hydrate and incorporate the flour. If you work hard at mixing with a wisk to hydrate, you will never have clumps of flour, so strainning will never need to be done. Wisk, wisk, wisk, and do that for a couple minutes.
