Want to know how to make fermented applesauce? Here is the simple way I make and preserve apple sauce using healthy probiotics! You can try canning or freezing applesauce, but fermentation makes magic. Check out this video and give it a try.
Fermented Applesauce as a slight effervescence and full apple flavor. More nutritious than cooked applesauce, this applesauce is raw and needs no added sugar.
In this video, I use a live cultured whey as a starter for this ferment. You can also leave this out and just do a wild fermentation. I have done this many times and yielded a great final product. Adding the live whey just helps kick start the party for the healthy bacteria, and leaves less chance that your ferment will become moldy. You can use whey from kefir making (see my video here • How I Make Fermented D... ) or from the yogurt making process (see my yogurt video here • How I make YOGURT In M... ).

Do you add spices after the whole process or when you are blending up the batch?
@preservingtoday
@preservingtoday 8 ай бұрын
I add my spices when blending, before fermentation. Fresh or ground ginger, cinnamon, nutmeg and little clove are all good.

Hi there, could I use kefir instead? I am not sure if the store bought whey has the cultures...
@preservingtoday

You could totally use kefir whey. I strain the whey from my kefir when I make cheese like in this video kzbin.info/www/bejne/iqepfop_nsyIqs0si=e5NOKkh4ULgGZcQ6/ You can also strain the whey from good yogurt, or even use a ginger bug starter, or brine from another ferment. If you have none of this, just leave it out completely and let wild fermentation do it’s thing.

Hey there! Thanks for posting! I started buying fermented applesauce from Fermeting Fairy on line and absolutely love it but the prices are outrgeous and unaffordable for the long term. So I appreciate you posting how to make this at home wich I will start doing today. One question however, any recommended variety of apple we should use? I'm trying to keep the amount of sugar content as low as possible but I'm not sure how will it would work with a granny smith for intsance that is generally much tarter and has less naturally occurring sugar.

Awesome. I’ve listened to Fermenting Fairy on Crrow777, good episodes. I’ve heard great things about her products. You are right, making things yourself if you are able is smart. I have made this recipe with many different types of apples, including more tart apples. It’s always good and it always ferments well, but can be quite different depending on what you use. I hope you enjoy experimenting to find you favorite.

Can you make a video about how you store all your kitchen tools and equipment? I don't even know where my funnel is 😅 and have a very small kitchen!

Lol. Right now my funnel is on the floor in the kitchen because my one year old takes everything out of my lower drawers while I’m working in there. :) But really, if you don’t use it you lose it. My funnel is usually being used or being washed because I use it so much.

Hello...can you tell me how to make the whey liquid you used in this video? I watched your kefir video as well but didn't see how you go that liquid. I want to make my own applesauce as well because Fermenting Fairy is great yet is a little costly:) Thanks!

Check out this video “How I Make Kefir Cheese”. It shows how I strain the kefir with a bag and collect the whey. How I Make Kefir Cheese kzbin.info/www/bejne/iqepfop_nsyIqs0 If you don’t use kefir you can also do this with yogurt. I have another video titled “How I Make Yogurt in the Instant Pot” and that shows how I make a strain my homemade yogurt and collect the whey. If you make kombucha or if you have a ginger bug starter you can also use a tablespoon of either of those to start your applesauce as well. Good luck, and let me know if you have any other questions! :)

Thank you so much! If I can’t make my own whey where can I buy it? Or if I want to make whey from your cheese video where do I buy that? Or is it always make your own?

@@melissak24.7 Live whey is a byproduct of making yogurt or kefir cheese. If you want to make kefir, you can buy the grains on culturesforhealth (dot) com. You can make yogurt by following along with my yogurt video. If you don’t want to do that, use something else as a starter for your applesauce. You could even buy a bottle of plain GT’s Kombucha from the grocery store and use a tablespoon of that. If you really have nothing, just go ahead and leave out the starter all together and make this with just apples and salt. Stir it a few times a day and watch it carefully, there are live wild bacteria present on the food and in the environment so you should be fine skipping the starter all together if necessary. If you want to learn more about fermentation, check out my website to see the online workshops that I offer there. Applesauce is covered in depth in the ‘Fermented Condiments Workshop’. @@melissak24.7 oh, and you could also buy real plain whole fat yogurt from the store and strain that to collect the whey. Following the steps in my yogurt video or kefir cheese video on how to strain.
