I think the ‘experts’ would tell you no, that the raw yolks could harbor bacteria that could make you sick. I would say yes! Salt will inhibit bacterial growth. I move the salt into the fridge and use it next time I’m curing or in cooking recipes. It’s a lot of salt and I hate to see it go to waste. I hope this helps!

do you have any ideas for how to use the leftover egg whites aside from eating them?

Lots of deserts call for egg whites only, like meringue or angel food cake. Do a quick search for “egg white recipes” and you’ll find more. You can freeze them for later too, but I fed these to my dog because I was busy that day :)
