What do we actually do with the timbers? Do we process them just for exp and sell on CM or do they have other purposes?

Process and sell or use it and craft stuff to sell

You can turn timbers into trade crates at Wood Workshops with your workers and sell those to trade managers. As for whether you should do that or sell timbers to CM really depends on how you play and the effort you are willing to put in.
