TRIVIA: Nata de coco (cream of coconut) was invented in The Philippines in 1973. Macapuno was also cultivated in the archipelago first. That is why it is in spanish.

So essentially Nata de Coco is the mother or SCOBY of the fermentation process of coconut milk and coconut water, allowed to grow, then cut, rinsed, cooked and stored in sugar syrup?

No, there is no yeast in the cultures of nata de coco so it isn't considered as a SCOBY. But yes, nata de coco and the floaty thing in kombucha are equivalent and have the same composition (cellulose)

the creation isn't as easy as it looks here. My mother tried this business (homemade) when I was a kid (a long time ago). The contents had to be exact, and the temperature for cultivation had to be at a certain degree all the time. Otherwise, it will not form correctly (won't bond) or there will be bubbles which will then be rejects. It was a hit and miss for my mother, 50/50 success and fails till she gave up due to unprofitability.

It's not a scoby because it doesn't have yeast in it. It only contains the bacteria component of kombucha. You'll only get vinegar in the end

@@ValCronin Yes i am sure. There shouldn't be any yeast in it if you want a proper nata de coco. That is why all the containers and equipment are cleaned properly and sterilized before it is used for production. Also, understand that bacteria like a steady life. They prefer to be fed the same thing in order to properly multiply. If they will suddenly be introduced to a new type of food, they usually don't survive. If you want to make nata de coco from kombucha, just make kombucha the normal way and not shake the container so that the cellulose that builds up on the surface gets thick. You can process it the same way except that it would be more dense and may have additional flavor due to the tea

its not the same texture. nata has a bit of resistance when you bite it, and then it pops but the skin is still there. its kinda crunchy. gummies are chewier
