I love how you maintain your optimism and enthusiasm, even when the sharks (or any other circumstances) prevent you from having the successful fishing day you would have otherwise achieved. It's really uplifting for the viewers. I'm glad you got that Mackerel, it looked delicious!

I’m a professional knife manufacturer and I can’t stand what these cheap Chinese knife companies are doing to the industry. Those knives are not the Japanese knives they claim they are they are actually made in Chinese factories from cheap low quality Chinese steel. All new knives are sharp straight off the shelf specially when they have a machine to do it for them the problem comes with how well they hold the edge. For the same price you can get proper hand forged knives that are actually from Japan made from Japanese steel. Always do your research before buying knives that claim to be Japanese.

The knives are genuinely garbage, they're fake Japanese single bevels meaning now hollow grind on the flat side, and they're made of the cheapest and worst hardenable stainless out there 420J2 at under 53 hrc. The steel maker which is Hitachi doesn't even consider it to be a cutlery grade steel.

Hey Matt, I love your channel, and I've been watching since close to the beginning. I just wanted to point out however, as someone who used to work in the cooking industry, that Kamikoto knives are not real Japanese knives. I've heard about them for quite a while now, and it's kind of a scam. They are really a Chinese company, and the knives aren't even produced in Japan from what I've read around the internet. They pretend to be real high quality Japanese steel with original pricing over $1k and they "discount" down to ~200 range to try lure people in as well. I've seen a few other comments from others who are aware of this. Do your research before purchasing guys

For what it's worth, I did some research, and the knives do seem to be of a higher quality than most. The steel is imported from japan and made in china. The benefit in this is that you get the quality of japanese steel without the price tag of japanese labor. They aren't pretending to be made of high quality japanese steel, they really are, and they're just assembled in china so that they can be sold cheaper. And their "MSRP" pricing is indeed hyper-inflated to sway consumers into buying their qualitatively comparable product at a perceived discount relative to similar genuine japanese sourced AND produced knives. Kinda scummy? Absolutely. But that's business. The reality is that for better or worse, in the jungle of the free market, the survival of the fittest is far but hinged upon the hurdles of honor and morality. Subjectively, I, too would feel much better investing my money into a legitimate, traditional japanese brand, whose legacy I respect over a chinese ripoff brand. And the proud few of us do all we can to keep the most respectable brands in business. But not everyone can afford that luxury. And objectively, as the devil's advocate, the knife set really does appear to be a quality bang for buck, and I can't blame Matt for jumping on a sponsorship deal after grinding so hard for so long to deserve one. And I can't blame you for chiming in with your experience either! As someone who has experience in both culinary arts and content creation, I felt obliged to go to bat for both teams, if you will. For anyone reading this, I must disclose that I have never used these knives, so I am speaking as much from second hand knowledge as the the poster I am replying to. My personal stance is that when possible, you should strive to find find a seller (of any given product) whose products and practices you respect, and take the time to learn how to take care of the goods that you purchase, so that they last as long as possible, with as little waste as possible, while the investment you make enriches the people who care most about making quality over quantity (i.e, learning to properly sharpen a knife is much more important than finding the brand who sells the sharpest knife off the shelf, and investing less frequently in a more expensive but higher quality and longer-lasting product is better than buying the cheapest version of any given thing over and over and over again).

@@gabejohnson97 To piggyback your point about their steel. Yes, it is imported from Japan, but not all steel is created equal. Their bestsellers are made of 420J2, which if you do a bit of Googling, seems to be cheap from all the knife experts. Bottom line is that we as consumers should be wary of these companies that show up in every channel of similar genre youtubers. I don't fault Matt or any other youtuber; this pays the bills. But any company who markets this much should raise heavy red flags to people.

@@Mike_219 ding ding ding we have a winner, they call it Japanese steel and i can tell you right off the bat that means stay away. Any company making a good knife will not only tell you the actual kind of steel.. like 420hc, aus8, cpm 3v so on and so forth. But will also tell you the HRC value of said steel. Saying its Japanese steel would be the equivalent of a fine restaurant saying try our sushi its Japanese fish lol. Instead of telling you the actual kind of fish.
