Jenna Diubaldo, partner/distiller at Sons of Vancouver Distillery, walks us through the process of making distilled spirits such as vodka and whisky, step-by-step from grain to glass.
The main processes discussed:
1. Mashing - combining milled grain with hot water to convert starches to simple sugars
2. Cooling - using a heat exchanger to cool down the hot mash to room temperature and begin fermentation
3. Fermentation - yeast is added to the cooled mash, which will digest simple sugars and create alcohol and carbon dioxide
4. Stripping Distillation - the first distillation, often referred to as the stripping run, takes the ~9% alcohol up to ~30% alcohol by removing solids (spent grain) and water
5. Spirit Distillation - ~30% alcohol (referred to as low wines) are distilled a second time to bring alcohol up to ~94% to make delicious, potable beverage ethanol
6. Filtration - if making vodka or liqueurs, ~94% alcohol gets filtered through charcoal to increase neutrality and remove unwanted flavour compounds
7. Maturation - if making whisky, ~94% alcohol gets proofed down to ~60% with water and then put into oak barrels for 3+ years
