One time at a conference I saw the catering people at the hotel with a box of these frozen cookies, this brand. when they served them they were SO good, so I asked the girl how to get them and she gave me the info of the food service rep they use. now i buy them in bulk and keep them in the freezer lol they are the best choc chip cookies i've ever had

Some tips for home bakers: 1) Weigh your ingredients! Including liquids and solids. 2) Don't use baking soda older than 6 months after opening. 3) After forming the cookie dough into rounds, place in the fridge for 24 hours to let the flavors meld. 4) Put some rock salt on top of the cookie to help even out the sweetness. 5) Consider substituting ALL of the white sugar for brown sugar. 6) Consider substituting half of the all purpose flour for cake flour for a softer cookie with a finer crumb. 7) Consider weighing the cookie dough rounds for consistency. DO: The baker shall consume one cookie shortly after baking for quality assurance and reward of effort.

If you just use brown sugar, you'll end up with a dense, wet cookie, not a soft fluffy one. But I like the dense cookies so that's what i would do

I remember the origin story differently. I remember it being pre-civil-war America and the baker being a slave. Her master loved chocolate cookies, but she ran out of the ingredients.
