"Petits farcis", which is a nissard dish (south eastern France). It's an assortment of stuffed zucchini, onions, eggplants, potatoes and tomatoes. The stuffing uses, among other things, mince meat of your choice and parmesan 😊 we usually use small veggies, so that they're individual portions, rather than large ones (particularly for eggplants). It's more of a spring or summer dish, and so the potatoes we use are also on the small side. Actually, if ravioli count as stuffed foods, then ravioli niçois is my favourite dish. It's stuffed with a beef (cheek) ragout and blettes (a type of chard I think). No tomatoes in the ragout, but red wine. It's marinated for 12+ hours, cooked for 12-24h then we use it to stuff the ravioli. Definitely not something I've ever made! My grandparents used to, but it's tedious and intimidates me 😄

It's because Eva knows how to cook everything with confidence and grace that she should cook so much, so well in one video! Harper should not ask her everytime. Today, was more like a compétions. We didn't even have a chance to take notes....Eva will sink into a breakdown if she has to perform like this more often....When will you read, think, go on hikes, work out ?

Ava....literally EVERYTHING you make i grew up on!!!! I am turning 50 this year and this makes me fondly remember when we used to have large extended family gatherings several times per week. I still cook like this but it saddens me that most Americans never get the chance to see or rather taste these humble gems of authentic (southern) Italian/Sicilian comfort foods. Most Italian restaurants in the United States have Americanized what they offer and the same old worn out dishes of food drowned in too much cheese and generic sauce are passed off as authentic Italian dishes when they truly are not. Thankyou for showing people that they can make spectacular things to eat that are healthy using what they have in the pantry for little cost.

My favorite stuffed snack and still is... from my Grandma Lupo...Dates stuffed with whole toasted walnuts rolled in sugar and fresh grafted nutmeg. Sometimes it was...dates stuffed with gorgonzola, prosciutto and walnut then drizzled with honey. Eggplants....till this day I can't stomach. Growing up in a family where both mom and dad are from Sicily gives Italian food a little twist. For the better. For that I'm grateful to have the flavors of the Mediterranean in my life, daily! Ciao

This is a wonderful episode. Stuffing foods saves so many ingredients that are not enough for a serving and to make recipes go further. Aside from that types of stuffing are also nice to eat on their own even if you have nothing to stuff. Stuffed calamari is my favorite. I made a promise to some neighbors that I would cook it for them in thanks to their help with shopping etc. during the lockdowns as I am somewhat disabled. I really must come up with the goods now!! It is a wonderful way of cooking because it makes so many daily ingredients a new and tasteful life.

I laughed all the way through at the number of dishes. I'm like, "Eva surely didn't cook all these in one day, surely it took a week," but I noticed her top stayed the same - for continuity? Really? All in the one day? Amazing! I'd struggle making just one. We missed the vicarious thrill of watching you eat them except for the calzone - I guess cos you had to wait for your guests.

I assume that Harper and Eva are active and do a lot of exercise. I too love good food and even with only eating normal portions i need to ride the bike, swim and go running on a regular basis to prevent getting to heavy! ;)

You can tell Eva cooks with love and passion. Of all ethnic cuisines, Italian is my favorite, and to put a finer point on it, the south of Italy. Campania, Bassilicata, Calabria, as well as Tuscany in the north.

For the peppers, I recommend a boiled potato (mashed) mixed with the cheese/vegan substitute of your choice (mozzarella or cheddar are the best imho), breadcrumbs on top to give it a crispy top.

I actually didn't know italians also stuffed everything! stuffing stuff :)) is a specialty of balkans and middle east as we make dolma out of literally anything and everything For the record, my favorite dolmas in the world are stuffed vine leaves, zucchini flowers, dried eggplants and intestines :))

@ecenbt Yeah, we definitly beat the italians in stuffing. Think also about stuffed onions (italians only grill or grate those) and practicly any big leafy vegetable we can turn into a wrap and we add a stuffed twists to fermented veggies aswell!

Is it strange that I made the stuffed shells recipe before I really understood cooking. I was a young wife and just put together flavors I liked. They were also easy and inexpensive to get in FL. at the time. Honestly, the way you make it is almost the same as I did and do now thirty years later.

Quelle sono persone, sparse per il mondo, che poveretti non conoscono la cucina italiana ! Uno che dice solo “pasta e pizza” è evidente che non conosce la nostra cucina.

Turisti che dopo 1 o 2 settimane in Italia si lamentano perchè "ma abbiamo mangiato solo pizza e pasta, ora vogliamo una bistecca!" (dopo di essere stati a Firenze, sicuramente). Se ci vai solo nei locali super turistici e non ti informi meglio prima, ovvio c'è poca scelta.

@@aasolano Obviously this can only be said by someone who does not know the Italian cuisine. Because someone who says "only pasta and pizza", it is clear that he does not know the Italian cuisine.
