Try freezing them before you throw them in the oil. Get amazing results with it. We do it where I work at a fish and chips place. We serve home made potato chips as a snack, sell like crazy and get a better result with them being frozen as they keep their shape.

Wrong potato, You have to use potato with low starch then you no need to boil them you can fry them directly or rinse and fry. You took 3 day for 35 kg of potato. We process around 90 kg of potato chips a day.

What I do is peel the patato, then wash the skin and put them in the air fryer with oil and a bit of salt. Then, get some crispy chips that take the same as normal patato chips

interesting video! i got curious if you'd have found a solution for the small frying batches with normal home appliances. I found one years ago, but it needed specialised frying recipient. We used an old maple syrup boiling vat that was welded on top of a long cast iron wood stove (about 10' long by 2' feet wide by 1.5' deep) and fitted it with a circulator from end to end, creating a gentle current in the oil. Put boiled chips on one end and scoop fried ones at the other. only did it once

The dedication is amazing :) I would of saved the counting process and open 10/20 bags of chips and weight each packet. Then take the avg weight and divide that by the weight of your full batch. Hey, I'm simple though, and most likely missing something lol. Incredible video.

Bro can measure the weight of one potato and count the slices you get from them then divide the total weight by the potato weight and multiply them with the number of chips you get from that single potato and you get the no of slices

You forget the huge moisture loss in the potato slices which is most of the weight. Better would have been to do just a kg of potatoes, then multiply the result by whatever kg he had in the big bag.

theres this other machine that has a spinning blade propellor thing and it go's super quick and you just feed the potato thru and it slices it just by you pushing it you dont have to do what your doing on your new machine
