Won’t break like glass. More durable than you think you know, it’s in your wall so it has to be somewhat tuff. You can throw this pile from 10 ft and it won’t break if it lands somewhat flat . The physics won’t allow the drywall to break because of the massive amount of weight the other sheets, so all that weight forces the sheets to fall as one solid mass like a brick of drywall instead of sheets

I typically used ½" but still carried them 2 at a time. But I'm a DIY not a pro. Also I got to a point where I decided 8' boards were gold since I generally ended up having to hold and screw them in alone. I had my wife help with some that wall ended up getting done upside down. Meaning instead of the top meeting the ceiling the bottom met the floor. No need for baseboards but need crown molding to cover that up. Lol
