She’s dedicated and knowledgeable about her craft. The fact that hot chocolate inspired her to create an entire process from scratch is just remarkable. Truly, she’s a model thinker. Not many people are able to follow their passion with this much clarity and drive. Mad respect to her, I admire that.

Hands down one of the most informative videos I have ever watched on making chocolate. I love how her chocolate is not made by huge machines, but in a small environment where she has complete control from start to finish. She's an amazing woman.

This lady inspired me to pursue chocolate making. Coming from a country that produces these beans primarily for export but in turn imports lots of chocolate, her voice keeps telling me to learn this and return home where I can help farmers who get paid very little from producing these beans under very harsh conditions.

Exquisito Chocolates 3 things. 1 I've had you're chocolates they are fantastic! 2 thank you for elevating chocolate as a craft and helping make a video like this. Chocolate has been criminally underrated with very little appreciation for it's nuance and I thank you for helping people see how refined chocolate can truly be. 3 I don't think you meant it in this way but the way you talked about some bitter chocolates gave the impression that all bitter chocolates are the result of over roasted and lack quality. From what I have been told there are just some beans with natural bitterness even when fermented and roasted correctly. I have had amazing bars with bitter notes that in no way diminish the flavor of that origin. So that’s my pedantic disagreement. That said I’m just a guy who likes chocolate on the internet and you are definitely more knowledgeable than I am. I could be wrong but I think that not all bitterness in chocolate is indicative of poor quality and over roasting. Again thank you for you’re contribution to the world of single origin craft chocolate.

So many people say they help the farmers but the reality is they don’t. She might be an exception but it is often used as a marketing tool rather than actually being a reality.

@@Lousasshol I don’t think you understand how things work in developing countries, most farmers are generational and have limited education as revenue generated is sufficient to cover basics. In many cases farmers lose money each year. Saying that farmers should help themselves is a very simplistic way of seeing the issue.

Wow, wonderful narration by Carolina. I didn't realize until now how intense chocolate making is. A lot of work goes into the process of chocolate making. Please don't use this comment as a reason to raise your prices because I plan on being a customer in the future. Thanks for all your work and expertise!

Damn this is a great video! Lots of science and knowledge and love of labor behind the scenes. I also respect how she keeps everything in the community with giving back to the farmers who do lots of hard work. I saw another video where people had to do all the hard work on the beans but saw how she already purchased the beans pre prepped but now I see how she got them so it makes sense that she gives back to the farmers. It's all a hard work of team effort with everyone putting in their two cents and working together. This is a very positive and educational fun video and I totally dig it! A++++ Thumbs Up! and lots of props and respect to this company and friends and family. This should be on Discovery + or something like that.

I think another great foodie channel you should try to create with is Bon Appetit, with maybe Claire and Brad. Claire having a pastry background and Brad having an experience touring and observing a cacao farm would make not only a great video but spread information about what good chocolate is to another larger audience.

No it's not. Burnt chocolate will taste worst and much bitter. But people who never ate dark chocolate and only prefer milk chocolate will still find it bitter. Because cacao has a bitter taste. For evidence their are people in the comments section who ordered her dark chocolate and found it bitter and said they prefer the sweetness of milk chocolate. Their are variations in bitterness based if percentage of cacao. Anyone new to dark chocolate can start from 70 percent.

This is kinda irrelevant, but i realised that when people comment something positive about someone, especially in the comments section, it affects how others judge as well. For example, everyone here is really supporting this lady and are commenting lovely things about her, so it then makes me think the same, but if a whole bunch of people where to say bad things about someone, the majority of the people would also start criticising. This really goes to show that we truly affect the way others think, and it is a really important thing that we all become role models to each other. Always be kind. Also I agree this lady is really educated, much respect.✊

Humblest flex I’ve ever seen. This lady is so incredibly impressive. Like WOWWW. She is so passionate and so educated on her craft that she knows the molecular structure of cocoa butter!! She built her own machine and then just casually throws in there that she’s a organizational psychologist! I actually screamed when I came across this. I'm so happy to see this video on the internet. Carolina is so dedicated and passionate about what she does at Exquisito. I'm from Miami and I took my best friend here for her 18th birthday and we did a tour, learned the chocolate-making process, and then decorated our own truffles. It was a beautiful experience. I also bought one of her chocolate bars (my favorite: dark chocolate with almonds). I highly recommend a visit if and when you can. ❤🤎

The best chocolate I've ever had has been made in France. When I say this to people I generally get a blank response. No one has heard of French chocolate before in the US. I stopped being able to buy what I once could import and that has lead me on a chocolate making expedition at home. Her experience and motivation to start validates my own. I'm so glad to find familiarity with someone who I assume makes awesome tasting chocolate.

It might have been Jean-Paul Hévin’s hot chocolate... they were famous for it, and it was unlike any other I’ve ever tasted...decadent as heck. They don’t serve it in store anymore but you can buy the mix and they have videos online explaining how to prepare it correctly.

I am a Food Engineering student in Turkey and I have to say this woman almost knows everything about cacao and the processes that are involved in chocolate making as well as our professors. Wonder if she ever had an education on food production or she is just passionate about what she does. Well, after watching the full video appereantly she just loves chocolate. I love how so many of her machines are DIY, like the winnower, even the vibrater thing that they use for the chocolate bars was an ikea cart, so creative!

I just like this woman, so artistic, so scientific and so passionate about what she is doing that she makes you appreciate every step of the process. I'd gladly volunteer in that small factory just to have the chance of making such a fine product.

You probably didn't, not all chocolate producers use these sophisticated methods and these high quality ingredients, the chocolate you eat is probably made completely by a machine with alot of artificial ingredients in it.

@@Jazzgin i didn't assume, i stated the probability that you are not eating quality made chocolate, most big mainstream chocolate brands doesn't actually put that much work into it, and i don't know about you, but i don't have a small chocolate factory near me, nor most of the people. Edit: typo.

HISOKA Amour I literally live in a neighborhood stuffed with boutique chocolatiers and roastaries. And also, tasting good chocolate is always one of the first things I do when I travel. I even save the wrappers. But I have always been a loyal eater. Didn’t know much about the process of making it. And that’s why I wrote that comment. So, please re-read my comment and read your reply. Hope you’ll notice what a weird assumption it sounds like to me.
