I’m a bit late to the party, but I wanted to answer your questions: 3:11: The midnight purple ones are ground sumac. In Turkish cuisine, we use it a lot in salads and some yogurt mezes. It has a mild, savory, and earthy flavor. 7:10: This is called acılı ezme, a staple meze served with meat dishes. It’s made by finely processing tomatoes, onions, red and green chilies. That’s why you didn’t see the onions. The sauce includes olive oil, tomato paste, oregano, and isot chili (a smoky and mildly spicy pepper). The dark sauce on top is pomegranate balsamic, another staple in Turkish salads. 17:34: There are no lentils in the dish. What you see are the almost-black isot chilies.

The "meze"(complimentary side dishes in kebab salons) that you thought had soy sauce is called "Ezme". Mostly consists of tomatoes, peppers, herbs and spices, pretty much Turkish salsa. Dark liquid on top of it is not soy sauce though and you would really wont see any soy sauce on OG Turkish recipes. It is "Nar ekşisi" which is a little sour but sweet pomegranate syrup which is used as a salad dressing mostly in Turkey. I am an Istanbul local and if you need help or suggestions about cullinary gems of Istanbul I am happy to help. I can suggest you places, foods or even come with you to the places to give more info + act as a translator. hope you enjoy your visit!

You should put parsley inside the lahmacun, squeeze lemon and roll it up and eat it. I shared these as information. Actually Eggplant kebab eat in different way.According to South easterN Turkiye they eat like this.way.They peel the eggplant, only inside is taken and you put peppers onions salt and what ever you want actually. Spread over the Lavash and put the meat on it. If you wish cooked tomato and pepper can be added on it. You make a round rulo and enjoy it.

Double big mac in Istanbul airport in 2024 September is 950 lira (£21/ $28), food prices in turkey have gone up like crazy more expensive than the USA and Europe but some things like fruit and vegetables are super cheap for example I got a 10kg watermelon for 50 lira about $2 dollars. So one tip for you Joel and everyone else NEVER BUY ANYTHING FROM ISTANBUL AIRPORT EVERYTHING IS SUPER EXPENSIVE EVEN A CUP OF TEA
