Hey Joel. With fish&bread the classic drink is not ayran actually. It is pickle juice or şalgam. Try it mate. And enjoy! And no, -ci suffix doesn't refer the plural form. That -ci suffix means the one who make/do/sell it. So in this case, "börekçi" means the shop or the person who makes or sells it :)

OKAY! Here are some tips to anyone coming to Türkiye from a Turk. Anyone you see that that's selling grilled mackerel in a sandwich they are selling frozen Atlantic mackerel that's imported from Norway or some other Atlantic country. Because local mackerel is called Uskumru and it's sold in seafood restaurants or markets for much more than what you're paying. You might ask if it's so why Turkish people are buying it? It's because it's cheap, fast and better than fastfood. But know that you're not getting local fish. Second thing is authentic Turkish Kebabs are made using lamb meat but due to cost and complaints about lamb smell it's made with beef or chicken so you're not getting real local dish if you don't know what real lamb meat is. I mean lamb not goat, beef or chicken so keep that in mind. Thirdly Turkish kebabs are not sold with any sauce! It will only have some salad made with tomatoes, onions and parsley and/or with some kind of a pilaff that is made with rice or bulgur and/or fires/chips and/or Turkish yogurt as a side. If they are offering you sauces such as ketchup, mayo, BBQ, some other in house sauce know that you're getting stale product. Because real kebab chefs daily make enough product to last the working hours or less. They never let it sit to serve the next day. Also Turkish people enjoy the taste of the meat and seasoning not the sauces. Ketchup, mayo, mustard, BBQ or x sauce is there to give taste to bland food or cover the stale food. And lastly stay away from the popular and famous places because they are not better than McDonald or Burger King. Spend some time to find local establishments and look outside the touristic areas. Look for local reviews and ask locals. You'll have the best food experiences in establishments that will look iffy to you. Good luck and enjoy.

Kır pidesi (kırpidesi mostly they write) is really a budget food. It's like you have more money than needed for a simit but less money than real börek or pide , you buy kır pidesi. Fast and cheap take away breakfast ..kind of something you eat with ayran or çay let's say.

Well actually yes I am blessed with this, if nothing else I do have a very strong very trustworthy digestive system :) but besides that, I can tell you that approximately 1,000 people per day have this exact combo on this exact street (if you multiply that by 1,000 streets only in Istanbul, then roughly 1,000,000 people per day also eating this combo, trusting their stomachs as well

Fish dürüm is neither a traditional product nor something with a long history. It emerged recently as a result of the whole 'kebapization' process of Turkish cuisine: Wrap anything in thin bread, add some spices. Fish has never been eaten like kebab in Turkey. But they invented this because it's easy to sell to tourists. And it doesn’t even taste good. The fish doesn’t even come from the Turkish seas or the Bosphorus. They use frozen Norwegian mackerel. It's disgusting...
