I LOVE LOVE your channel. So helpful. I have made multiple batches and very thankful for your channel. I have lost 30lbs and have 20 more to go. One thing I did was cut out ALL added sugar and fake sugar in my diet. So no more sodas. Just water and coffee (with coconut oil, butter, and heavy cream). That is what led me to kombucha. I just received my Brix Refractometer to test for sugar. I also ordered a Hydrometer Kit. Have you considered doing a video on testing the Kombuch for sugar and alcohol? I want to test for sugar to see exactly how much is in my brews and see if there are techniques to minimize the amount of sugar. I also ordered an Alcohol Refractometer to prove to some family members that the alcohol is almost non existent (I don't drink and that came up). Thanks again for all your awesome videos!!

I just started drinking Kombucha in hopes of aiding digestion, it really helped, also feel like it helped with a sense of wellbeing. This is the first video found on KZbin when I searched, did not expect that to brew one's own was an option. I just started drinking two of the GT's synergy 16oz bottles a day yet am going to check out how to make it.

I also don't have a limit. I just took the first sip of my first kombucha. I have six bottles of ginger kombucha. I cracked one open, not much pressure, but some, took a sip, did a backflip (only figuratively), and put that one bottle in the fridge to get cold because I want to have it cold. The other five I'm leaving out a bit longer to see if they'll build up more carboration. Thanks to you. I've learned so much from your videos and now my first batch is upon me!!!!! Huzzah!!! The second batch is beginning to taste good, although it still has days to go.

So let's say someone goes to 7-11 and drinks a giant coke that's okay. Then that same person is worried about Kombucha? My limit is how quickly can I brew new batch without running out by the next bottling session...

I tested the "how much I should drink kombucha " I drank maybe 2 oz a day for 3 days, tummy issues for a week, I stopped kombucha for 2 days, no tummy problems, started kombucha again 2 oz a day, tummy issues back...its caused by kombucha, now I won't stop but I think some ppl do have to ease into it and some ppl can dive in full force, my case, my issues directly caused by kombucha and digestive system getting used to it.

I have personally had up to a gallon in one day with no effects (Usually 2-3 16oz bottles in a day). I'm trying to replace soda with Kombucha and it's working out very well. Although, I've heard of others with problems after 1 or 2 (16oz) bottles in a day. As mentioned in the video, you'll know what's best for you after a little bit of time and experimentation.

I have heard anecdotally that for some people (who may or may not have some predisposition towards it) get heartburn when they drink too much or too consistently. This makes sense medically considering the high acidity so I would say this would be the biggest "risk" as far as drinking kombucha. It isn't something to be scoffed away either, especially if you have a family or personal history of GERD, esophageal cancer, or cancers in general.

How can we measure the amount of sugar in the final product? We know quite a bit is eaten by the yeast, but how much is left after the second ferment?

You gotta brew a *lot* to keep with that appetite. I just got into this about 3 weeks ago thanks to an interesting study (called FeFiFo for short) published by a couple guys from Stanford. Gave kombucha a try and just love the stuff. Am going to start brewing soon.

I had a bleeding ulcer a while ago - I understand that I should be a little bit careful with acidic things over all, but would Kombucha be harmful (in small amounts daily).

I'm on Day 7 of my first batch of kombucha! I was afraid I added too much sugar, and I used raw sugar. I thought it was going to kill the scoby after I read that too much sugar (1 1/2 for a bit over a galleon) would kill everything, I was also afraid I used the wrong sugar. Some people say raw sugar is a bad idea for the SCOBY. I'm happy to say my brew is doing fine, and the new scoby is forming on the top of the large glass container. It also smells wonderful! I may have taken some missteps, but it seems like every thing is going to be ok! I'm going to wait a day or two to taste, since I don't want to disturb the magic. Thanks for your wonderful videos!

You Brew Kombucha and just an FYI, i took your advise from another video (pretty sure it was you lol) about being patient on the first brew and not disturbing my jar, it took 8 days before my mother started to grow but 12 days later it's formed all the way across now!! And mind you, it's in a big jar, 2 1/2 gallon... All your info on describing things and common mistakes is so great!!

Unfortunately, there isn't really a quick way to speed the process along. And especially if you're planning on passing them along to others, it's super important to give both the scoby and the starter tea enough time to get super potent (or else they may not be strong enough to adapt to your friend's/family's new environment and start a brew on the right foot). Theoretically, if you have a large scoby, or have extra scobys, I'd recommend putting one (or a big piece of one) in a small jar with about 2 cups of kombucha and 1 cup of sweet tea. Then wait a week and see if it grows another scoby. If it tastes + smells super acidic, then you know it's a pretty strong starter "set" -- then split it apart (give a good chunk of the scoby + 1-2 cups of that to a friend). Then use the rest to add more sweet tea/kombucha to the scoby and repeat it. Or you can do it multiple times in different jars if you have enough scoby + kombucha. You're basically just making smaller batches of kombucha which will ferment/acidify faster because there's less of it. And as your scobys grow, you can split them up and give them away. The strong starter tea is really more important than the physical scoby itself too in my opinion, so you really do want to give it time to get super acidic before you give any away. I had 2 GTs earlier I had a severe allergic reaction 7 hours later.. but I had a long period of not drinking any. I feel just fine now but something bad happened and I felt terrible for about 2 hours

Justin Brink be careful because there is a small percentage of alcohol in the stuff and it can be more if left yo ferment really long. If you don’t typically drink alcoholic beverages, that could have been the issue

Do you talk about the alcoholic content that can be found in kombucha. I have my sister who is an alcoholic (recovering) and highly sensitive to alcohol now a bottle of my home brew. I don’t let my bottles 2nd ferment for more than a day or two because I don’t like it really fizzy. I’ve read that is when the alcohol content is lowest (little fermenting time). My sister, fortunately did not have any adverse reaction. Can you expound on that subject?

Regardless of if the fermentation is 7 days or 30 days, it won't naturally produce an alcohol content greater than 0.5-ish. I create the occasional batch of hard kombucha, however this is a longer process and takes 3 fermentations. The key ingredient for high alcohol is champagne yeast. It's added before F3, another long waiting period, but then results in a pretty regular 6 to 8 alcohol content.

I drank my first batch ever of kombucha that I made at home (which didnt have mold) but was sour. I had a bad stomach ache. So not sure if I did something wrong and the kombucha went bad. Im always paranoid like you said to be poisoned lol. But Im asking because I had homemade kombucha at my friends home and it didnt hurt my stomach at all. So im confused why mine could have made me feel bad.

Same 😔 Usually never had troubles with store bought but after 2 bottles of my first brew, wow... bathroom bathroom bathroom. It was a perfectly healthy brew too! PH on point, no mold, great color, odor and taste. No idea what the difference was.

I'm not a doctor, so I can't advise on you personally, but kombucha is basically just fermented tea. For most healthy individuals, kombucha doesn't do any harm, regardless of age. Homemade kombucha may contain trace amounts of alcohol (it varies depending on the brewer), so that's something to consider as well if you're under-age. If you like, you can check out my write ups here (www.youbrewkombucha.com/brewers-resources) -- check out the links in the "Kombucha Context" box. Ultimately, it's a personal choice -- if you have any hesitation about consuming anything (whether it's kombucha or cheese or cookies or any other food), you shouldn't eat/drink it. But again, it's a personal choice that you need to make based on your health, dietary needs, allergies, etc.

People that eat a lot of fermented food have a higher risk of stomach cancer. They are very good for you, but try to stick to a cup a day+ solid fermented foods.

With most kumbucha to get the benefits from the bacteria and yeast, 4 ounces is plenty, and why only 4 on a glass of water OS recommended with ACV. To much to soon will send you top the rest room. As for safety, all tea contains floride, while ot OS almost impossible to consume enough for a floride overdose, it id very rare but has happened. Floride overdose is more likely from using the powder over tea mixes, which I hope your not using.

@@nicolep2424 yes fluoride is found naturally in the dirt and the tee tree obsorbs and stores this. The new younger leaves will have less. There have been several cases of fluoride poisoning from powder instant tea

Very weird! It's really difficult for true kombucha to produce even moderate levels of alcohol, but it really depends on the unique yeast/bacteria strains in your particular culture!

I feel an big energy buzz after drinking kombucha! I think its the caffeine - I don't know how much caffeine is actually left but I'm really sensitive to caffeine so a bottle of kombucha probably feels to me like what a cup of coffee feels to normal people haha. I drink it for the energy!

Typically a 16oz bottle contains as much caffeine as a 5oz cup of decaf. So, not much.

Center for disease control says you should only drink 12 oz. A day. 4 oz at a time, 3 times a day. Drinking 2 or 3 16 oz bottles a day is potentially detrimental to your health
