I think that the 'older Zhu Yuan' is actually just a past colleague / friend of Qingyi's former self and in present time the Zhu Yuan we know fills that role for Qingyi's current self therefore due to Qingyi not being able to recall (most of) her memories the two images of her old and new colleague / friend fade into each other and look somewhat similar in the video. The reason I say this is because the 'older Zhu Yuan' and the one we know are way too similar for it being a coincidence. Also, Hoyo probably doesn't want to introduce more unknown NPCs. It might be their way to emphasize that this character isn't as relevant as players might think. But those are just my thoughts.

The old Zhu Yuan is her friend, the new one is her friend descendant. As for how Qingyi got there, it might be that someone create an automaton and somehow revive her.
