The intense food coloring is off putting IMO. It'd be interesting to try a more natural version though. Using various fruits and vegetables for color. Maybe some beet juice for red. Berries for purple. Carrot juice for orange and so on. Since it's a cake bagel it's probably sweet anyway and the veggie taste won't be noticeable...
