I don't want to offend anyone but this style of cooking is more prevalent in northern and eastern India. That spice mix is called "Paanch puran". It is used mostly in north and eastern part of India. Also most people moved to Trinidad and west indies were from north and east India. Trinidad has highest bhojpuri and maithili speaker outside India. Southern Indian cooking is more coconut based. Spices contains cloves, cardamom, cinnamon, curry leaves etc.

Yeah genetics show that the Indians taken to the Caribbean were Central Indians (Bihar, UP, MP, Chattisgarh), not North or South Indians.

As a Indo-Trini I'd say this lady re-invented the goat roti, I really like the use of paratha instead of dhal puri, and the use of the slaw too. Looks like the best roti I'll ever have.

At 00:26, she says "we're gonna make paratha rotis". That's like saying "we're gonna make bread breads". A paratha and a roti are almost the same, except paratha is finished off in a pan and roti is finished off on the flame.

It really just depends on how much Chili powder you add to your curry blend. The rest of the seasonings are more flavour spices rather than heat.

That is definitely not a Roti or Paratha. That most likely resembles a Chapati. But again, Chapati is made from wheat flour. Why do you add Chicken feet stock on to your goat curry? Chick feet stock, really?

Because there is no one recipe to anything she said it is her " twist" that means she is the "artist" to that recipe. No two artist make the same painting a now two cooks put the same spice or measurements. I hope this gives you a better insight.

Roti is a wheat flatbread so rolled with a rolling pin but Paratha is flaky which is made from refined flour and shreded into flakes

@@NikZ500 I had roti the last time I was in Jamaica, and it was flaky and very delicious. From what I understand a large part of Jamaican cuisine was influenced by Indian indentured servants who started arriving there in the 19th century.
