how much info do the public/other bidders see about your bids?

I can’t speak for Frameworker but in our experience all bid applications remain confidential for only the contracting body to see. However if a bidder has any questions regarding aspects of the Invitation To Tender then that (and its answers) generally are made public for all bidders to see.

@@PocketProjects Exactly, however if you win a tender, the contract value will be published publicly, along with your company name. Commercially sensitive data will be kept confidential however

Competitive tendering for major projects in the UK is becoming a thing of the past. It's the easiest thing in the world to submit the cheapest price. All the estimator has to do is find all the mistakes in the tender documents and delete money as appropriate. Then the Contractor claims all the money back at construction stage when the Client is forced to issue changes to correct the mistakes. Instead of this charade Cients who are street wise now enter into a partnership arrangement with a Contractor who ensures buildability is built into the design and the mistakes are eradicated.

A Contractor is appointed by a Client based on his experience which includes staff cv's, financial strengths, and details of the contractor supply chain. Then the Contractor is part of the Client's team. He then provides buildability input into the design bringing his supply chain into the design input. Then he puts a budget price in place and as the design develops he converts the budget price into a firm price. The skill is in putting an early budget price in place which is improved on when the budget price is converted into the firm price.
