why always use a lot of scripts or plugins?

Because this is a tutorial about how the script works. Specific workflows in AE are tedious and people like me make tools to make the workflow more streamlined. A script is a way to share that workflow with people who are interested. You can use AE perfectly fine without scripts or plugins so no pressure to use them, its just that some tasks are made a lot easier if you do use them.
