How to Add Calculated Fields in Google Sheets

is there a way to calculate the difference between cells vertically on top of each other in a google sheets pivot table using the calculated field? For example I have a list of vendors and their purchase order dates. What's the best way to calculate the difference in time between purchase order dates without having to do manual calculations. I'd love to have an active table running to quickly view in real-time.
