How to Age and Cure Pork Tenderloin without salami casing at home

Today, thanks to our friend Domenica Silvana who decided to share with us her spicy pork tenderloin recipe, l will show you how to prepare the Italian Mocetta at home without using salami casings.
For this recipe you will need:
Pork tenderloin 1 kg
Sea salt 500 g
Sugar 4 tsp
Garlic 1 clove
6 bay leaves
1/2 glass of wine
Hot pepper 1 tsp
Sweet paprika 8 tsp
Black pepper powder
Kitchen towels 2

Nice, I'll give this a try this week, I do a fair amount of charcuterie but have problems finding recipes for dry cured stuff that doesn't need a curing chamber, being able to just put it in the fridge sounds great. Thank you.

This is one of my favourites that I make regularly although slightly differently as I smoke mine after the salt cure and I just airdry them by putting a piece of string through the end and hanging them inside a converted fridge I use for making Salami etc. Tastes beautiful in a bagel with lettuce and some scrambled egg and freshly ground black pepper.

My very first charcuterie was your pork tenderloin in casings recipe.... They were spectacular! But it was very time consuming getting the tenderloins into the beef gut casings I was able to find. This recipe looks much more simple. Thanks once again.

I have been curing and air drying pork tenderloins for ten years here in the Philippines. Sea salt, brown sugar,2 to 1 ratio. Bay leaf, black pepper and chili flakes.2 days in the fridge. Rinse and cold smoke for at least 6 hours. Ready to eat if you like a soft texture. I hang mine outside under a covered patio untill they reach the dryness that I want. No refrigeration needed and I live in the tropics

Parental hint, your children should understand how to keep food if there were no utilities. The way we lived once worked great for thousands of years and then in 100 years, we went all processed. Start bringing some hands-on do-it-yourself food education as you can see here. Short, easy-to-understand/follow videos, great rewarding results for the encouragement! And my son even likes cooking now since he watches me prepare food in the old world ways (he ate it is what did it!) so he learned he can personally recreate what he likes! This is a great channel.

I also never did it yet, but I just have my first salami, without casing in the ash and a bacon and tomorrow a beef"Bacon"! all recipes I was watching up to now are in German , because my mother tongue is German. I just tried to fined an English version , but nothing came up. In principal it is like you do all in the beginning, and then put it for three days in the fridge and afterwards for three days in the room an then for some weeks or months, depending on the thickness in fine sifted ash. I will let you know how my one will turn out in a couple of weeks, if this is ok for you? Regards from the Zambeziriver in Northeast Namibia, Jörg

I use the coffee bean grinder to make my own spice blends. it makes things a lot easier than trying to measure out multiple spices while working with meat. also you know that it is an even mix and coverage

I've made this 2 times & LOVE it!!! I'm wondering if anyone has a clue if I could use plain VIVA (quality paper towels) instead of cotton cloth as the casing? 1st time I made them, I didn't use anything, just tied & hung in fridge. They were excellent, but on the drier side. Second time was with the cotton cloths & were perfect. For clean-up purposes, I'm thinking an experiment with at least one tied in paper towels is where I'm headed. Thoughts?

They will store in the fridge for a while however the curing process will continue. I would suggest a few weeks. The reason is the meat will become harder and more difficult to eat as it continues to cure. I vacuum pack my salume once they are ready. They will keep up to one year in this state. Hope this helps.

Quick question sir…I really like these videos you make as I really love Italian culture food etc…. You can wait 1 week more but after you should eat it because if you wait longer the meat will be too dry

Thanks for your reply. I travelled around day 18 and was away to about day 31. It was indeed dry so I put it in cold water for a few hours changing the water ever so often. The result was good... Less salt and the meat had re-hydrated. We ate it all the same day. I still find it very very salty.

The best will be 10*C degrees but you can use the classic one like I have done 5*C degrees
