Roast Leg of Lamb
Serve 6-8
Mint Pesto:
2 cups mint
2 cloves garlic
¼ cup olive oil
1 tsp. salt
½ tsp. ground black pepper
1 leg of lamb
Seasoning:
1 tsp. granulated garlic
1 tsp. granulated onion
1 tbsp. salt
½ tbsp. ground black pepper
Directions:
1. Combine the Mint Pesto ingredients in a bowl and mix.
2. Open the leg of lamb and rub the inside of the leg with three quarters of the pesto. Reserve the rest of the pesto.
3. Roll the leg of lamb and tie it to secure. Slide the leg of lamb onto the Rotisserie Shaft and secure the leg of lamb with the Rotisserie Forks.
4. Combine the Seasoning ingredients in a bowl and mix. Season the leg of lamb with the seasonings and the rest of the pesto. Secure the Rotisserie Shaft in the appliance.
5. Set the appliance to the Rotisserie setting. Set the cooking temperature to 375° F and cook until the desired doneness is reached (about 40 minutes).
6. When the leg of lamb is done, let rest for 20 minutes before slicing and serving.
