I have just started airbrushing and I really want to do this! Could you use a matt varnish instead of clearcoat?

Yes you can use matte finishes over your airbrush work. If you paint and automotive / motorcycle surface a body shop can spray a matte clear coat over the artwork. If you will paint on gessoboard as I did in this video, there should be a variety of aerosol matte coatings available. I usually always do a test panel to make sure it is compatible with the surface and your paint, before you put it on your main artwork. Also check the paint manufacturer for whatever paint you choose to use. Many of them have their own coatings designed for their paint.

I have not seen this done but I suppose it would work. It would be nice and rigid. You would need to ensure that the paint does not dissolve it. Water based paint would be less likely to dissolve it. Different companies make solvent proof stencil material.
