You can apply without owning a property. Just give other reasons why you have to go back to your country. You can change your return date but don't exceed the validity of your visit visa.

This is awesome. In the invitation letter is it mandatory the person inviting must have his/her signature on it? Whats are the important details that should be on the invitation letter? In a scenario where its a friend inviting a friend, what prove can be used to show friendship to increase the chance of securing the visa? Can a non citizen invite someone over to the UK?

You just add the persons name and email address. The letter should contain your relatioship with the person and why you're being invited, you can add if the person is sponsoring or accomodating you. In the case of a friends invitation, you can show pictures, chat and calls. Yes, a non citizen can invite you.

Just a quick one.. is there anything you can do while on this kind of VISA? Say, Internships, Volunteering or Just any form of part-time paid or unpaid opportunities while visiting, instead of staying idle? Would that be allowed?

You can't do anything that will give you payment or have access to public funds with the visitor visa. Internship is work, and you need a work visa for that. For volunteering, you can apply for a Temporary Work-Charity Worker visa. But you can do a short course that will not exceed the timeline of 6 months.
