Can you address the adjustable height of the rest as in why one would make it lower or higher?

(Note I am in no way qualified to give an official answer to this) I believe it may be for different arm lengths or some other bodily factor that would mean having just a bit more space would help a lot

Same ish story. With no prior research I bought a violin from a thrift store and it came with this weird part I could never identify. Just had it ID'd as a shoulder rest and this video helps!
