i feel like catching the ball low is better, most great shooters do that, and it has like a momentum that improves the shot, and it still releases the ball quicker

I love it, one thing I would suggest, if I could - is catch the ball low - because the next move is to move down anyway or if you drie you will all ready be low! Great stuff

How do I fix release finger consistency? No matter how much I practice somedays I release it off my correct finger other days it goes off my ring finger.

Could help if you work on how you are catching the ball and putting it into your shot pocket, that is where I think the problem is occurring. Maybe practice dribbling and catching the ball and putting it into your shot pocket quickly and properly

I see good videos from ShotMechanics channel. If you hold the ball from the side when you load for a shot, when you bring it up and rotate your wrist on the shooting hand, it naturally brings your middle or index fingers your release fingers every time. If you load the ball from behind the ball, it releases off the outside of your hand. I haven't made it very consistently myself, but it's more comfortable.
