How to Boil Crawfish with The Shed BBQ
I've been lucky enough to build amazing relationships with some of the top pitmasters in the world. In this Meat the Masters series I have convinced them to share some of their best kept secrets with you guys.
In this episode, we travel to Ocean Springs, MS to see my buddy Brad Orrison at The Shed BBQ & Blues Joint. Brad and his sister Brooke are famous for their World Championship BBQ having won Memphis in May two times! However, they are also very well known for their crawfish on the Gulf Coast. Brooke's husband is a boat captain, so to say this family knows seafood is an understatement!
I've been boiling crawfish for over 20 years. in fact, that is how I got my start in outdoor cooking. Brad hit me with a couple MAJOR secrets in this cook. He leveraged a fairly new concept of using two pots which I have been seeing more and more of lately. The use of a clean water pot to boil and then soaking in a 140 degree pot in this video made me a believer as soon as I tasted them. The 2nd tip was a new liquid ingredient I had never seen used. You'll have to watch to check that out.
We shot this video in January right when crawfish season started and we just had a cold snap, so the crawfish were not as big as you can typically find at The Shed. The Shed normally starts serving crawfish the first week of Spring and are known for only boiling huge "select" crawfish. Next time you are traveling down I-10 be sure to stop and "Get Fed at the Shed!"

I can testify to that 2 pot method! Cleanest, best tasting crawfish hands down! Hmmmm, lemon oil, I'm stealing that! Got everything else dialed in. I should hang out at the Shed more often, only 10 minutes from my home.

Are you doing 5 minutes in boiling water then 1 hour at 140F? Seems like awhile to wait for crawfish

@@chrismenard2922 I actually steam them in one pot for 4.5 minutes, then soak them in the seasoned pot for around 20 to 25 minutes just like any other boil. Steaming cleans them like crazy!

So you don’t actually boil them in the clean pot, do you just leave the basket above the water?

Russ, going to have to do another crayfish boil using the 2 pot method! Only thing is doing it that way kinda means u can leave the Boil Boss hanging on the wall perhaps? Edit: just was recommended by you tube to watch your 2 pot steaming boil method 😆. Although 4 years is along time ago so maybe not bad idea to make a new updated version...

I discovered the shed back like 20 years ago. When it was just one little shack. I've eaten bbq all over tge country since then. And the shed still remains my all time favorite bbq. I love the growth they have has over the years. Well deserved.

I'm retired now but I used to travel a lot down south ( I live in Michigan) I made it a point to always stop at the Shed great food fun carefree atmosphere must also say they have my favorite potato salad ( see if you can get the recipe and share online) great to see you featuring them on this episode

I did a road trip down to New Orleans back in 2019 and did a little side trip to the shed. From Minnesota to New Orleans is a seventeen hour drive and my mom didn't think it would be worth the extra driving but it definitely was.

My first crawfish boil was for my wife and I's wedding rehearsal dinner. My dad ordered 50 pounds and man, it was one of the best meals ever. I think I ate probably 5 pounds of just crawfish and who knows how much corn and sausage on top of that. Definitely need to give the two-pot method a try as we do a boil every year on Memorial Day.

Let me start with Matt Pittman, Im a huge fan buddy, thanks for all the great videos. Growing up in New Orleans, then moving to TX 15yrs ago, I have developed a pretty serious eye roll when it comes to all these crazy boil variants. Though y'all have the best BBQ (hands down) Texas was the worst with their plain water boils & "dusted" shell style 🙄. This 2 pot method was about to get eye rolled as well until I saw it through. I think I'll visit The Shed one day and try it there and if they pass the test I'll come back and leave a follow up review...I have no problem given credit where credits due :)

I live in OS and I've never really enjoyed The Shed's BBQ - it's never consistent. Murky Waters is the spot in OS for BBQ for me, but none compare to the great spots I've been to in Alabama, Tennessee, and Georgia. Never had their crawfish though - might go check it out since the season is upon us.

On top of the veggies listed, throw a can of green beans with holes poked in the lid and the label taken off in there. Also, a few packages of cheese tortellini are life changing in a boil.

Never heard of that and I’m from Houma, LA. May have to try it out and see how it turns out. That is an issue if you have a crappy burner which doesn’t reboil quick and you end up overcooking or when soaking it overcooks. Is the seasoning pot just warm or just a luke warm water pot?

Respectfully, I was TDY at Keesler AFB last May and despite the locals recommending OTHER BBQ restaurants I may the short trip to the Shed. The food was not good and the lady who took my order was rude when I asked a question about the menu. However, I was not there on a weekend so I didn't try thr crawfish

As much as I love this, I think Traeger should come up with a 2k bbq that would be more suitable to the average family. I love the induction side burner and all the new features but this bbq is huge! Make us a new model with all the new features but keep it affordable and somewhere around the size of the smaller models. I have a pro 575 and i love it but these new features would make it that much better. Traeger rocks!

To not overcook but keep flavor freeze leftover crawfish juice and add it in it adds flavor while stoping the cooking process
