That TX Whiskey really must have packed a punch. You were both hurting first thing in the AM. The beer cans rattling was also a factor I'm guessing.

Not to brag or anything but Sam Jones BBQ is about 5 mins from my house here in Winterville, NC. Makes me feel good when I see Sam and his dad Pete get the recognition they deserve. True legends in the whole hog game. Thanks Matt for all that you do for the BBQ community! Fun fact, Sam likes to sing Karaoke.

Matt...one suggestion. Before throwing pig onto rebar, season Both sides of pig on prep table. Also, cut slits into outer carcass & stick in garlic cloves...the More the better...to add more flavor to meat. In Hawaii, we do basically the same except we dig hole in the ground & light fire w/mesquite/wooden pallets & let burn down to coals. When fire burns down 1/2 way, toss in stones, roughly soccer ball-sized & smaller, to heat up. When fire burns down to coals, remove stones, dunk in cold water to cool down & place in carcass. Close up carcass & encase in chicken wire. Again, More wire is better!-lol...Place whole carcass onto coals & thrown on burlap bags SOAKED/SATURATED in water. Cover Whole creation in plastic tarpaulin/heavy canvas, such as military canvas tent. COVER Whole pit w/dirt & let steam 7-10 hours!...VOILA....Hawaiian kalua pig!...BTW...Fire bricks can be substituted for stones. This operation involves 24-30+ people & Communication is Key!....A-L-O-H-A from Hawaii

@@texasowl5356 what do you consider drinking? 1, 2, 6, or 12? Drinking to me is finding that limit where you still feel your self but one to two more drinks depending on the drink determines whether you lose yourself or understand where you are and eat something to stop and drink to maintain the effect of body muscle pain relief instead of losing one's self and acting out like in movies and TV.

Growing up in NC, and loving both eastern and Lexington style BBQ, I’m proud to see eastern style finally getting the recognition it deserves. My papaw had “pig pickin’s” all the time when I was a kid, and watching these guys standing around pulling meat straight off the hog brings back memories.

Great vid. I did this same thing last time I went whole hog. The only thing I did different was that I used a little more seasoning prior to the cook, and I tied wooden rods to the hocks ahead of time to make the flip easier. I love that simple sauce (apple cider vinegar, pete's hot sauce, salt and pepper) and will be sure to try that next time!

WOW that looks amazing. At the VFW I belong to we love to cook our pigs Argentinian style. One of our members has a father inlaw from Argentina who showed us how they do it. He greated a special rig made from rebar that the pig sits on (about a foot off the ground.) then a tin roof like the one here is thrown on top. on top of that goes your wood and the fire is started. As the fire burns down you take the coals from the fire and line it around the pig puttting it just under the rig on the ground all around the pig. Takes about 5 hours depending on the size of the pig. We leave the pig on it's back. We buy ours from a slaughter house having them butterfly the pig so it kind of lays like yours did. It gives us a chance to season the pig real well as well. Wish I could show you some pictures.

thanks for the vid... we used to do those pigs every year so your vid brings back some good memories at the lake... brings to mind the story about the swimming pig that was down in San Marcos, Ralph the swimming pig was famous when I was a kid and performed with the swimming mermaids at Aquarena Springs... the story kinda goes that they retired the pig and put him on the BBQ...a few boys got a little carried away with the beer drinking and called an ambulance and reported that Ralph had been in a fire and they needed an ambulance right away... ha..ha...ha..

It’s eastern North Carolina vinegar sauce. Lots of recipes online. Not my favorite but it’s traditional.

This is how my family cooks a hog. The only difference is we built a frame/cage that the hog goes in, it makes it way easier to flip.

I was stationed at SJAFB in Goldsboro, NC. I went to my first Pig Pickin in 1975 and was hooked from then on, been cookin ever since, I use a vinegar based sauce with ketchup, crush red peppers and spices. The cook takes all day cooking very slow with just small amounts of charcoal sprinkled here and there skin side up, once the skin gets hot to touch, it time to flip that hog, once flipped we cook it a little longer to crisp up the skin, Once its done it time to shake the sauce all over the pig, A six pack or two is a must while cooking, Stand back and call everyone to come and eat, them rib will make you want to holler hiney ho. We have rebar screens that we welded up. We sandwich the hog between and secure with bailing wire. We also leave the front off our pit for thorwing coal.

Michael did not want to do screen because the old-school way of just using rebar allows more room for the skin to bubble up when you crisp it. Definitely made it hard to flip though.

@@MeatChurchBBQ I feel ya. We bake off our hard skin after we part out the hog and just eat it as is. We also mop with a mix of cider vinegar, black pepper, and crushed red pepper. I guess it just depends on who's cooking and how your family does it. Looked killer!

I'm from Texas and this is true BBQ the way we used to do it and I still do. An offset smoker it NOT a BBQ pit and is relatively new considering how old this technique is.
