I have worked around meat and butchers my whole adult life. I watched a bunch of these videos by chefs and the so-called pros, and yours was better than any of them! Very helpful and unintimidating.

Nicely done, I remember watching my Grandfather as a kid whip right through just about anything from a deer, cow or pig. One of his Dad's many trades was butcher and he was a quick study.

I buy the whole tenderloin too and cut it myself too. So easy. I use the bits n pieces for Jennifer's A country Life Vension Pepper Steak. I don't have deer meat so I use beef. And it is so DELICIOUS. Thanks for sharing your method. I will try your way next time..

Shelby this is So Kewl!! I never knew it was that easy to trim!! I think I can even do that with my hands!! Hubby has a filet knife LOL 😂... Now if I find a good sale I might have to break down and have some meat with that's. It grass fed 😂... Hey sweetheart this was a great tutorial!! My only problem was mine was a NY and it was all fat on the back and the front of it was fat with the rib indentations.. This was my issue not yours and that’s where I got lost!! 🤣 Did I get the same kind of meat? I got it done thanks to your help and kind words all through the video.. I’m just not sure 🤔 it was exactly right!! Is there a trick to picking these out?? The meat looks good cut up it just wasn’t easy to clean up all that fat!! Your encouraging words was the only reason me and my bad hands made it thru that poor thing HAHA 😂 I didn’t get a 45.00 one we bought a 100.00 dollar because that’s all they had and we wanted to put some beef in the fridge We eat so much chicken and Turkey on a regular basis we thought this would be good change and still eat it in a little at a time to still be healthy...Thank so much for this video for I would have never made it thru this without having this video!! Thanks for the lesson, when I get low on steaks I buy those loins at Costco. But I have only cut them into steaks. Plus the only prices I have seen is 90 to 110 dollars usually. So I think you got a really good deal.

After viewing your video, I went to Costco next day and purchase one. I clean as per your instruction and then I cut and wrap beacon around each piece sprinkle with some black pepper and it was stupid good. I have never done this before and my husband think I am the bomb.com LoL. Thank you.
