Genuine Vietnamese coffee brewing style includes the use of a stainless steel single-cup brewer/filter called a Phin, real Vietnamese coffee, and generally includes sweetened condensed milk. We show several different types of Phin filters and how to brew this style of coffee easily.

Grind is important. Most grinders settings of medium or coarse drip work best. This looks like coarse corn meal. If you go finer, the filter holes will clog; if you go coarser, the water will run through too fast. To make it stronger you can add up to 50% more coffee, I suggest under the insert. If you use the screw-down type, don't tighten it, just screw down till it sits on the coffee grinds, and no more. Larger Phins do not drip faster per se, they drip more volume across a wider base.

The best instructional video I have seen on this subject. I make mine this way and it's delicious. I drink the coffee "black" without stirring almost down to the milk, then swirl vigorously for a sweet, coffee-flavored treat to finish. All a matter of taste, of course.

You made a beautiful presentation! I drink the instant Vietnamese coffee, Vinacafe Ca Phe Hoa Tan 3 in 1. I am a single guy and student and work too. I have no time to make coffee like you showed during the week. However, I will try to make fresh coffee on Saturday or Sunday now that I have seen your video. Great job and Thanks for sharing, Cyrus

When I first tasted a Vietnamese coffee when travelling through Vietnam I couldn't believe my taste buds! Condensed milk and that buttery flavour....unbelievable! I brought eight bags of beans back home with me. Vietnam is awesome, great coffee, great food, great beer and great people, what more could you ask for!

The proper amount of coffee for a standard 7-cm Phin filter (makes 6 ounces) is one level tablespoon. Coffee scoops are supposed to be a tablespoon, also. The number of beans depends on the size of the beans. I suggest using a rounded tablespoon/coffee scoop of beans. After you grind them it should be about a level tablespoon. The right grind looks like cornmeal. It should be big enough not to clog or slip through the filter holes and not much bigger.

512kvinion weasel coffee is one of the most expensive coffee in Vietnam and very hard to brew. If you brew its wrong it is complete like normal coffee but if you do it good this is one of the most flavor coffee i ever taste.

@hippt Vietnamese coffee drinkers like bold, smooth flavor and strong coffee. The golden rule is more coffee and less water for a good cup of coffee. Choose a filter in which the presser is pretty tight to the vessel. Pour first little water for a best absortion and the coffee to be expanded, and press down again the presser before pouring the hot water. You have to be sure approximately one drop per second then you get it right.

it depends~ normally it's about 1/3 of your coffee phin filter( 2 spoons)~ it takes around 2 minutes to let the water drop all

15 videos and this is the best, thanks! If you were to make is a lot stronger would you first put the heaping Tablespoon, screw the filter on, then put extra on top? I'm assuming the compression must be correct to get the right drip rate. Also, will the grind play into the drip rate? Also, all things the same will not a larger phin drip faster? Due to the larger surface area that will create more dripping? I'm thinking an Aeropress with a stainless filter will get the job done.

I'm glad Sidney Frederickson linked to this in another video. It looks interesting. Since espresso makes so little an inbetween strength alternative sounds great since it makes the same amount I would have from an automatic drip machine.

@luongbinhhai Of course she is not a barista, she says herself "this is the way I brew it at home." This is a home brewing guide, not barista training. It's here to give a brief demo to our customers and others who want to know how to use their Phin filters. Everybody uses their filter a little differently. Some people like to use twice as much coffee and let it brew for 12 minutes even if it gets cold. Every coffee shop serves it a little differently. This is an introduction only.

My friend gave me a couple bags of Trung Nguyen Vietnamese coffee recently. It doesn't taste right in my normal brewing machine. Thanks for the video. I will go buy a phin and brew it correctly now!

Most likely you are using too little coffee or using an American style coffee, which is often very porous in comparison. Make sure you are using at least a rounded tablespoon of coffee and tamping it just a bit. If using a porous coffee you can probably add 50% or 100% more volume to get the right brew time. That always brings the best flavor.

Just recently got back from Vietnam. Bought the Phin and was quite puzzle on how to correctly use it. Glad to have this video. A question though... can I just simply throw in the coffee into the Phin without screwing it down with the compressor?

My Phin Coffee Set came in the mail yesterday. I have tried it and It's Great! By itself, I say It's way better than Italian Espresso - except... by the time it finishes brewing/dripping it's a bit cold. Great for Ice coffee, sure! :) I have figured that you can put that Phingy on top of a small boiling milk pot. Haven't tried it yet. Will follow up tomorrow. Chúng tôi yêu Việt Nam! I've been doing it wrong ever since i bought my own dripper. I totally forgot that i had to pack the coffee in first and then screw the cap thing on to pack it. I just dumped the coffee grounds into it and poured water over lol.

I bought 2 of these in Vietnam just in case I ever lose one. Also if u just on a stopover u can find them for sale in the airports. Alternatively, possibly try an asian shop or online

+David Sain The world's largest Asian coffee company, Trung Nguyen, uses only gravity insert in their shops. We also find that people prefer the gravity and they work as well or better. All the shops we supply eventually switch to the gravity ones... the woman who was nice enough to do the demo for us, like many Vietnamese who brought the tradition here, still use the screw-down, but part of the issue is that you need to reach into the hot water to adjust it afterwards, usually. We figured that since the screwdown is so common in Asian stores here, we would use the screwdown for the demo, but really, we prefer the gravity!

Sorry to be late on reply. The problem may not be the phin but the grind or amount of coffee. Try 50% more coffee or finer ground to get it to drip slow. Phins can be purchased at vietnamesecoffee. com if you do decide you don't like your filter.

where can i buy the phin? online... because i bought one in an asian market and the phin drips so fast, it takes five seconds to drain the whole phin. even when i do everything in the video and adjust here and there.

I can't seem to make mine like Lee's Sandwiches. When I asked the cashier what brand they use he said the franchise sends them pre-made coffee by the gallons. Anybody know what I may be doing wrong?

You can buy top quality phins of three different sizes at vietnamese-coffee . com. The gravity insert phins are easier to use and we prefer them.

The one in the film is 11 ounces. We have 11 ounces and 15 ounces. But a 15 ounce phin is so wide it will not fit normal mugs, you need an extra-wide mug :-)

Use the 11 ounce phin for small mugs and the 15-ounce for large mugs. The 15 ounce filter is very wide (fits in a minimum diameter of 3.25"). Make sure it will fit on your mug, or else brew into a jar or something you can transfer into your mug.

You can buy any in vietnamese or asia market or even local supermarket its easy to found & cheap, not expensive at all. You also can mix with coffe+fresh milk+Condense milk(condensed milk is really sweet) so if you want less sweet just put it a bit. i was use condensed milk only but nowadays i use half condense & half fresh milk, its less sugar & still taste the same. Im Vietnamese too. (Sorry everybody my bad english :)

If your place dont have any vietnamese coffee shop/market. You can use some others product powder coffe in pack then dissolved with a bit hot-water & put ice+milk then mix, its easy & fast. But this way, less coffe so savor not the best, but you can try one. Sometime i use that too, its easy & fast, cheap so i have it everyday, when i have time i do original vietnamese coffe like that. Hope it help

thanks a lot for this video. i brought home 5 phin filters from my vietnam trip 1 week ago. sadly none of the filters have a screw-filter. so i pour in 20 ml first...then another 50 ml of water. but because there's no screw on the filter... the filter goes up and tilts inside the container. how can i prevent this if the filter doesn't has a screw? thanks for helping

The gravity type works very well if you don't pour all the water in at once. Prime it with just a couple tablespoons, wait 10-15 seconds, then add the rest of the water slowly. This seats the insert against the coffee so that it won't rise up.

these can be found in most Vietnamese supermarkets in the US now and they are super cheap, just a couple of dollars. Make sure you do very fine grind or the water will just go right through. It reminds me of several espresso shots because it is so dark. Condense milk makes it taste so much better.
