How to build a distraction free laptop on a budget

I just bought a thinkpad that's in the mail, about 8 gigs ram. I'm installing Ubuntu Mate on it and removing the wifi chip -- so it will just be ethernet

In Linux, for distraction free reasons, I would uninstall most of it. My server laptop (backup, dump place) goes to the prompt and then I can type "startx" for a couple of things in semi-desktop mode and restart it or shut it down when I'm done.
