I believe at 5:31 you could have stuck a foundation under the one which was already there and then the next foundation would snap again. The problem was that the new foundation wasn't touching the ground. But I do like the wall method of doing it. Might make it easier under water.

i build a garden and it say my base is afloat and i can't build my farm land on it what should i do

Base is afloat? As long as you are building the farms on a foundation or floor piece there is not an issue.

be careful of using pillars method in PVP servers. you will just make the raider's life easier

Even on PVE servers they are not good to be used unless completely covered even the NPCs target them first
