I harvested a whitetail deer in Florida and it's time to process the meat! I recommend dry aging meat if possible, but with temps in the 80's, I had no choice but to jump right into processing. In this video I show you step by step how I butcher an entire hind quarter of a deer at home. I talk through each cut of meat and explain how I like to use each cut when cooking.

These folks are right. I’ve been butchering deer since I was a teenager and I’m almost 80 now. I might have watched a hundred or more videos explaining the process and yours is, by far, one of the very best at simplifying and explaining the reasoning behind each cut. You’re one of the few who detail the how and why of locating and removing that gland between the rounds in the hindquarter. Excellent - no, superb job. Thank you.

My wife was my best hunting buddy and my daughter was 9 when she past away but my daughter is now 20 and all the time I spent with her hunting and fishing has paid off . She is a very dedicated hunter and I would like to teach her and myself how to properly breakdown a deer with the correct cuts . Thank You AWESOME VIDEOS

What I like about your butchering videos is that you make it doable for amateurs, and you explain not just the cuts, but which are best for cooking different ways. I particularly appreciated seeing how you cut out the glands and provide the explanation about why, and how your knife could spread the distasteful gland material. And… you just make me smile!

best video on dealing with hind quarters. the fact that you discussed the direction and inner VS outer portion of the hind separates this from every other video on the subject - and I've seen them all (almost). Very well done and highly useful. 10/10.

Allie, you are truly a surgeon, thank you so much for this video otherwise I would have never known about that gland in the hindquarters. Many years my family has butchered their deer, and just sawed away and hindquarters for steaks no wonder it tasted like crap, thank you again so much much appreciated I'm doing mine right now

Finally! I have been butchering venison like this for 4 decades, you cannot remove all the silver skin. Connective tissue ect... unless you do it the right way as this young ladie has in this video. Venison has a wonderful flavor if you dont marinade in milk, vinegar. And a whole host of flavor cover-ups, this to excuse a poor butcher job. Thanks for showing the folks, you go girl!

I can’t tell you how many videos that I have watched and it never stick because the people showing you go way too fast when making the cuts. Hello Outdoor Allie, I’m older than “Karl” (in one of the comments lol) its my first year hunting and have harvested a few this year (has been the best experience and don’t know why it took so long for me to start hunting) I paid for processing the first one-expensive- watched another video and did what I thought was ok on the deer until I saw yours and I showed my 70 yr old neighbor how you do (did) it and he was amazed. Know that You have helped some older guys butcher their deer the right way bc of the time you took out of your life to help someone; so thank you & God Bless.

I'm going to echo a lot of the comments on here already but... FINALLY! A video that I can actually follow along to and learn the different names of the rear cuts. Every other video I've watched either goes blindingly fast in the cuts, doesn't show the point-of-view from the person butchering ever, and changes the orientation of the whole leg so often and fast that I immediately lose sense of what I'm looking at. Thanks so much for making this!

I just took the top and bottom round and sliced the most amazing looking jerky I have ever done on my jerky board. My 9yr old daughter an I are passionate about venison and she thanks you as well. I have cut up well over a couple hundred deer in my lifetime. You did a wonderful job of explaining each cut to those who don’t know the difference and are very handy with a knife. Got me excited for my hunt in NW South Dakota in a month. We have 14 tags to fill and I am always the head butcher so will be eating good

I’m an addict for butcher videos but no one has explained in detail where every cut lies on the hind quarter. Instead that all flip the quarter every which way during the butcher process and I spend more time reviewing which way they are looking at the meat vice how they are cutting it so I can follow along. I have no idea how many deer I have butchered in my day but it is a lot. I have also taught young hunters how to do it and I take a lot of pride in it but when teaching inevitably they ask what type of meat is that. Pride kind of slips away when all I can answer is, “Steak, grind, stew or roast.” Amazing job showing and explaining not only how but what each cut is and how to best use it! Had I known what the eye of round was on a deer I wouldn’t have been so disappointed in it all these years! Thank you for teaching this old dog a new trick or two! I look forward to more of these videos and can’t wait to share them!

I got my first kill this year and was excited to butcher it myself, but I had no idea how to do it. Your videos on breaking down front and rear quarters were so clear and concise that I had no trouble at all breaking down my elk. It just took me 2 whole days to do it all lol. Great video Allie. I am 42 and just started deer hunting this season and was blessed with harvesting a doe and buck both from our property we own in the country. @@OutdoorsAllie for sure 😊. We moved to the property we are on all the from Hawaii to be closer to family and start our homestead. I began beekeeping, deer hunting, got my first wild turkey. Working towards a stronger sense of food insecurity and self sufficiency, but grew up hunting small game. I am hooked for sure and love the taste of venison when properly cooked. Plan to make a whiskey butter and bourben venison heart recipe this weekend!

You are awesome! This was actually my sixth deer. First in AZ, Coues deer small also. I’m usually the trimmer and packager. But this year I was first to bag mine so I was left with these hind quarters to butcher. It was a snap. I don’t think my Husband ever knew about that glad so yah great to learn. Thank you! Now hopefully he gives me the call soon to come and assist on bringing another home.

Once again, Allie, I have to thank you. I continue to watch your videos often so I am improving on processing our deer. I recently purchased a new knife very reasonably on Amazon, along with a pair of cut proof gloves which have greatly increased my confidence when using my new knife.🤣 I have just gotten an electric canner and will begin using it this week! So excited about all we can do now to store our venison long-term. I have to say braised shanks are hands down my favorite meal so far. Praying for you and your family. You are such a blessing. Ive processed my own deer for many a years now and Ive watched many many videos on breaking down meat and this one is by far the most informative one I have seen. Been thinking of doing a breakdown on my youtube channel but Ill just recommend this video instead cause I definitely cant explain the breakdown in this way.

I am going to make biltong and pemmican. Biltong with salt pepper vinegar and coriander. South African charcuterie jerky , more cured than dried see. 2 guys and a cooler. Pemmican will be the majority of it because it can be stored without refrigeration for like 20 years. Venison beef tallow and dried berries . Some good videos on pemmican on you tube, making and storing pemmican with Donald porta. Not plugging just in case u were interested

When I started watching this video, my first impression was it will be to no avail for someone who wants to learn how to butcher the venison as it will take her ages to break down that small hind quarter. However, then I realised that proceeding in such a slow way is just perfect for the beginners, as usually when a skilled hunter or butcher is showing how to process the meat it’s very fast and thus hard to follow for someone who is just learning how to do it. Good job!👍

Wow I did this with a buck I shot about 1.5 weeks ago and completely winged it. My wife and I spent about 2 hours doing what you did but ended up with similar looking end results. Imagine the time I would have saved lol. Excellent instruction.

I finished processing my first carcass today. I struggled on the hind quarters but luckily i was cutting it all into cubes so it didn’t matter how much i messed up. But so glad i came across this video now so i can make it easier in the future!!

I’m back again, Allie, to thank you! I learned to can our deer meat last year and it is the best way to store it!! Venison takes on a whole new flavor when it is pressure cooked as in canning. No more tough meat ever! The shanks have a flavor all their own. I can ground(80%/20% beef fat), stew, steaks and long boneless shanks. I hope you will get a chance to try an electric canner. It makes canning fun! I also have a dehydrator and I’m ready to start jerky in a few weeks when our hunting season opens. Thanks again! Hi Allie, I've hunted over 30 years, can't anymore but still get a quarter or shoulder, both given to me, always did own, even small game, birds.. saw on home page, you did an outstanding teaching job, ice tried teaching how but never as perfect as you explained, I just went to fast and no patience lol, but now all the time in world as 52 year old cripple. I’ve only gone hunting once when I was 13 and didn’t harvest, but as I’m getting in my early 40’s the desire is popping up again. Excellent video Allie! I'm fortunate that my wife hunts with me and is right next to me when it's time to process our game. This year we handled the entire job from start to finish all by ourselves, to include grinding the trim. Doing all this together really helps us to appreciate the blessing of being able to hunt and harvest meat for ourselves and it's so much healthier than store bought meat. We have been participating in the process for awhile, but are now starting to remember the actual cuts as we go through the process on our own. If I could offer one small piece of advice it would be to caution your followers to be extremely careful if they chose to purchase and use one of those havalon piranta knives you used to break your deer down since they are effectively a scalpel on steroids. We use them as well, but it never fails that one of us gets over confident and nicks ourselves 🙂.

Got my first mule deer this year and while butchering didn’t go quite as I’d hoped due to others rushing to get it deboned I learned a lot from this video over my other deer processing and can’t wait to try all the steps on my own from this video and the front quarter ones next year!

I started fully processing my deer last year because my family loves cubed steak and most processors only do the backstrap on a average doe I get 25 pounds of steak and 20 pounds of ground. Awesome video thank you for sharing this and being so thorough.

One tip that helps me out is using what i call a "dirty" knife alongside my nice sharp boning knife. I actually use this same method when im skinning a deer. I use the "dirty" knife for the dirty work. Cutting around bones, kneecaps, or cutting through hair when ringing the deer during skinning or cutting off the legs and head. It allows me to always have a sharp knife on the side for doing intricate cuts while butchering or skinning an entire animal without the need for resharpening my good "clean" knife. For my dirty knife i literally just use an old stiff 4" rapala knife which has a broken off tip lol. But i love this method. When i need to get down and dirty or do some prying in certain areas or digging into bones i use that knife.

Eye of rounds get turned into minute steaks by tenderizing and then breaded like a cutlet and put with gravy. They are one of my favorite cuts.

Allie! You couldn't have overlooked anything for years and years and YEARS! You ain't even years and years old! Now that's very different from me! Thanks a lot for the in depth video. Shorts aren't very beneficial for something like this. I've been hunting and butchering white tailed deer here in southern WV for almost 40 years. I do a pretty good job but wanted to do better. I appreciate it! And I much prefer shank in a slow cooker. There's definitely no slicing meat on it but it will cook up super tender and flavorful that way. 🦌🙏🇺🇲

I just found your channel and love the time that you take to explain in detail everything you are doing. I really like the "Bearded Butchers" but a lot of the time, they go so fast that you don't get the detail necessary to do it yourself. Great Job Allie , I have been butchering deer over 50 years and could not have done a better job myself. I like the way you named each cut of meat and explained its best use . I don't think anyone could have done it any better. Keep up the good work . I would caution you about wearing gloves and sterilizing knives and grinders between deer when butchering more than one deer . I have encountered CWD here in the Arkansas Ozarks on our farm, 2 out of 7 deer tested positive for CWD and I had to destroy the meat and bones so for people who live in CWD zones please be cautious of cross contamination. Always use the check number on each package so it can be identified. I'll be watching for more videos to share with my friends and family. May God bless you and your family and have a wonderful Christmas.

Professional butchers and meat cutters should take notes from you on how to do an instructional video. I have cut my hind quarters just as you have done but it's difficult to explain to people who ask .
