I do it slightly differently but It ends up more or less the same. Good job. It is always nice to see it done correctly.

Yeah, we sometimes do it like that as well, then braise it with some onions, carrots, celery and a generous helping of red wine :-)

Definitely, I do butcher my own deer. But nothing with the skill and knowledge that is in this vid. I can't wait till next season so I can practice some more. I'm definitely going to watch this again next season when I get my next dear. Hopefully I be able to produce better cuts then in the past. I loved the way you explained, and showed how its done. Can't wait till the next vid.
