How to Can food using the INSTANT POT // STEAM BATH canning in the INSTANT POT
I recently was without an oven for a week right in the middle of peak canning and preserving season! This led to me to try out canning using my instant pot since I didn’t have a stove for a water bath! This is NOT a pressure canning tutorial, but simply a different variation on water bath canning!

The InstantPot Max does do pressure canning. RoseRed Homestead tested it with a data logger in the jar (several times) and it reached the temperature for the necessary time period.

The temperature remains at the level both inside the “time called for” and as it comes back down which is also important at Pam of Rosered Homestead explains. Happy canning.

Awww, Connie this means so much to me to hear! I am so happy I was able to help you through this video!! Canning/preserving can definitely be intimidating but I’m so glad you jumped in and tried it!! It’s such a good skill to master! I’m definitely no master yet either and have lots to learn, but the IP has made it extremely easy! I’ll be sharing more tutorials next spring/summer as we beginning canning from our garden again! 💕

I have severe asthma. All the humidity from the big pots of water boiling bothers my asthma. This is soo much better! It is a relief. My husband planted 14 tomato plants! I was stressed out! We also have five apple trees. Using the Instant Pot is a big relief! Thanks!

This video was SUPER helpful!!! I have an older instant pot so it didn’t have the sterilize feature but according to Instant Pot they say you can sterilize using the manual pressure on high for 15 minutes 🎉 I’m doing my VERY first instant pot water bath jelly today thanks to you!! Ultimately I would like to purchase the electric Presto canner so that I can not only water bath but pressure can as well. Thank you for sharing this well explained video!!!

I've had my Instant Pot for appr 10 years now and it never had occurred to me to use the steam function for canning. I'm so happy that I saw this.

I love using my instant pot I also purchased the pressure canning attachment. I make a large batch of spaghetti sauce, stew, chili etc in the crockpot and then can 4 pints at a time in the instant pot. Basically every time I make something I end up with 4 pints on my shelf. For a single person it's perfect for small amounts.

What a lovely video! Thanks for the tips! Also just so you know, you can prop the cover of the insta pot on the handles. That’s what the notches are for on the lid. Just pop it into the handle hole! Perhaps not visually appealing for the video, but helpful when running low on counter space! 😊

Thank you so much! I’ve never used my IP for small batch canning. I just made Cranberry, Red Pepper & Jalapeño jam. Ready to load into the IP. I’ll let you know how it goes. It tasted delish and it’s so pretty. I’m going to be doing a lot more small batch canning now that I know how to use the IP. Cheers!

@@AmmieHarris - It was a total game changer! I processed three batches back-to-back in my Yedi Pot (similar to an Instapot). With Yedi, I just had to leave the vent valve open and choose the Manual setting. Once the steam started coming out, I set the oven timer for 10 mins, and the jars came out perfectly sealed. SO thankful! The grape jelly is delish. Next project? I've made ghee (similar to clarified butter) several times. Next time, I will use the Yedi and give the jars a quick steam bath. Last time, I had three out of four jars that failed to seal, so I'm hoping the steam bath will ensure the jars of ghee will seal. We'll see.

@@JanDaLadyRoze I am so glad it worked out! And we love ghee butter but it’s so pricey to buy in stores! I’ve researched just a little on how to make it myself but would love to try this too! I’m so glad the jars sealed perfectly! I’ve yet to have a bad seal yet either!!

I did kraut 5 years ago. 7 minutes they sealed solid. Kraut is still shelf stable. I've eaten some recently.

Why didn't I think of using my EVOO DUO PlUS for steam canning? This is an excellent practical tutorial and will make my small-batch canning a breeze. I will be putting my 4 fig trees into the ground this Spring, so maybe I will have enough to make some of your delicious fig jam too.

@@marinakucherov1218 thank you! You will follow the same process here but look up canning time for pickles and Simply adjust your timer when the steam starts on your IP. All foods process at different times at different altitudes so I can’t answer that exactly for your specific situation!

I have not tried it with high pressure, but you definitely could test it out and just leave the valve open as described in the video and set your time that way. But double check the seals afterwards as I have not tried canning this way! Maybe it will work!!

Do you contine leaving the steam valve open after the 10 mins is up? For the entire canning process?

Yes you will leave it open at the end of your canning time, turn the IP off, and open the lid when it unlocks. You never have to close the steam valve

I’m so GLAD I wont have to use the enormous amount of water used for a regular water bath canner, and I can do smaller loads!!! Thank You so much!! I assume any thing that is normally water bath canned ( not pressure canning) could be done in this fashion?…..

Yes I always hated filling up the huge stock pot for a water bath too!! So glad you found the video! It’s saved me so much time too! And Yes, anything that is safe to water bath can, could be done this way in an IP! So the higher acidic foods, fruits and jams/jellies! Just NOT the meats and veggies that must be pressure canned for safety reasons!

My instant pot doesn’t have a sanitize function. Is it okay to skip this step if the jars are washed or does it effect the whole process too much?

@@angelicalarrabee588 that’s fine! You can sanitize them anyway you’d like. I only shared bc this is how I do mine for convenience!

There are multiple settings on the insta pot steam setting ... wondering what combo you use. I'm doing jam. My settings 10 min, more, low pressure. But I'm not sure it's hot enough and on 10 min it actually steams for more like 25 min. K eventually just turned it off.

Do you close the valve once the steam is steady?

@@lokinoke5998 no you never close it. This is how you time your canning process. Once it’s steady, start your processing time then just turn IP off once that time is up

Does it have to be a specific model of the instant pot or can I use any of the models? Definitely want to try and canned some jams and jellies as well as maybe some applesauce this year if possible.

I would assume any model would work as long as you have the “steam” function button!

Thanks for this very informative video! I want to try canning this upcoming spring but I did have some questions. Why did you choose not to sterilize the kids or rings? And how do you know if 1 minute of sterilization is enough?

Hi thank you so much!! We love this method of canning/preserving! As far as sterilizing lids and rings, I used to do this and often had lids that didn’t properly seal. (And lots of spoiled foods! 🤦🏼‍♀️) Once I researched, I found that the heat can often affect the seal on the lids. So a quick rinse in hot water is sufficient! As far as the rings, they don’t really touch the food, so a hot rinse in warm soapy water is good for them too! Could sterilize them if you wanted to though! And the 1 min sterilization is what the source I learned this from taught me. The IP gets SUPER hot in that cycle and you’ll see lots of steam when your cycle is complete. The 1 min has worked well for me and all of my foods sealed and I’ve not had any spoil. But you could always do a few min more if you prefer. Thanks for the questions! Hi! You’re welcome! And canned goods typically last around 1-1.5 years when stored properly!

When you say 3-5 cups, does it need to cover the jars? Or half of the jar sitting in water?

I use 3 cups every time. It will not cover jars as in true water bath canning!

Has anyone canned lemon curd before? & do you prepare the curd before? I have a simple but wonderful microwave recipe but I’m unsure if this way cooks the curd more. And help would be amazing! I’d love to use my ninja foodi to can curd. Lemon curd is my favorite and I’d love to give it out for Christmas presents.

I don't have a instant pot, but I do have a pressure cooker. My question is, Will I still be able to steal can in my pressure cooker?

Yes a pressure canner is even better! Some recipes don’t need a full pressure can and can simple be water bath canned but you can definitely pressure can and seal your foods! Just look up specifics for each item your canning for time and PSI!

I have the tall (asparagus) canning jars that are almost level with the rim of the IP insert. Would the height of the jars make them unsafe to steam can? Also, can the bottoms of the canning jars rest in an inch of water or do I need to find a higher canning rack?

Hi Jeanette! I’ve not used the tall jars but since the Steam water bath canning is not really submerging your jars like a true water bath can in a stockpot, I’d think it would work fine! The stream will still build to seal the jars no matter what height! Just make sure your IP will still close and seal properly! But I’d be sure to test a few first bc I don’t have experience with that size jar thus far! And my jars rest in the water! I just use the rack that comes in my instant pot!

Hello, New to Instapot and want to purchase the most useful size and style that includes the canning feature. Is a 6qt or 8qt big enough for 3-4 8 oz cans at a time? With only two of us, I don't want a larger pot if I can avoid it. Thank you!

Hi! I have the 6 quart and it holds everything I need to can at a time. It holds 4 pint jars and 5-6 half pint. It will not hold quarts because it is not quite tall enough!

I just got one new in a box rummage sale here in the USA. Can't wait to use it. I can jam using a big water bath. This way I can use a much smaller one and don't have to heat up the stove. I paid 50.00 and it's the blue one. Mist be a limited color. Well yes I have hymn books we all need to keep watch person don't know the day or hour wish Jesus will return. Water bath is just using the steam and rolling boil from the water to preserve. this works well for acidic foods like tomatoes or fruit jams and jellies that have sugar added or pectin Pressure canning is for things that aren’t acidic like beans/meats/potatoes that need higher pressure to properly preserve them safely

They are shelf stable as long as the lid sealed properly (lid does not pop up and down and jar can be lifted by lid without the ring). If it did not, then yes I would refrigerate!!!

Hi I just follow whatever the original recipes states for a “water bath” then I let steam bath in instant pot for that long. Sorry I don’t have an actual guide for times though!

I honestly could not say! I had a few jars fall on their side when I was doing a water bath canning and they leaked out! But not sure if that had anything to do with them lying on side. I may test it with one jar just to be safe before you do several and they leaked!! Let me know if it works!

@@AmmieHarris Thanks for the reply! I only have a 3qt instant pot, but my BIL really wants some pickled peppers so i think im gonna ask him if i can borrow his, i think he has an 8qt. We spent a lot of tie growing these peppers through a hot drought so i would hate to lose any so better safe than sorry. Do you have a water bath video you could direct me to? im new to your channel but like you and would like to learn more

@@heather_bot yes I’d def try to borrow one before accidentally ruining a batch of peppers! Those sound delicious! Our peppers always struggle in our area so we never get many! And I do have a video where I water bath canned peaches. Main thing is if you are just using a stock pot (not a special water bath rack-I don’t use one) don’t let the jars touch bottom of hot pot. I leaned the hard way and had many jars crack! Lay a towel on the bottom or the little rack that comes with the instant pot is what I do! kzbin.info/www/bejne/m5uagoxniaqNmck

@@AmmieHarris Thank You!! where do you live, we do super hot peppers (reaper, ghost, more exotic stuff) so people love it around here in Kansas, but with the over heat and drought it was really difficult. Have you tried container growing your peppers? they grow a bit smaller but pack flavor and you can move them around the yard to wear you want depending on the time of year or day or what they might need, even our mild peppers do well in containers

We’ve tried in ground gardening peppers (bad year/ bad soil since our first year on the property) and raised bed growing peppers and bringing in lots of good soil!! The raised bed year was the best yet for sure, just didn’t grow an abundance to be able to can some! I’d love to do pickled peppers though!!

@@fluxmechanics you can do that but I’ve also frozen soups in glass jars. Just leave 2” or more space and when you go to thaw, do it in the fridge in a bowl of water But vacuum seal would work well to. Unfortunately meat products just don’t have the acidity to safely can with a water or steam bath!

Hej Can you help me please ? I have tried WB in a large pan with 2 or 3 jsrs. But i have bought a 7 Lt pressure cooker. I only want to do 2 or 3 jars at a time so it is ideal for us. Can i use the pressure cooker to do the same as WB in a large pot because it uses alot of electricity for a 3 hour session. Please reply to me if you can. Thanx

Hi I wish I could say for sure yes or no but I only have experience with the instant pot. Are you asking about a pressure canner or cooker? You can definitely only can 2-3 jars at a time in the instant pot!

@@addictedtotreasuretrash108 if I’m understanding you correctly, then yes the pressure cooker (instant pot) will be very similar to water bath canning it’s just easier to keep the temperature regulated bc it’s contained in the cooker vs bringing the water bath to boil which takes much, much longer.
