I am so glad to see you do a canning video again. I miss that. I have canned for years but never canned pumpkin (I puree and freeze), but have canned sweet potatoes. I always learn something when you can. Hope to see more.

It's tough putting out canning videos because when everything is in season, it takes most of my time to can it all and doesn't leave much time for editing. I'm sitting on several canning videos that I haven't had time to edit. Hopefully I'll get to it soon.

First canning the pumpkin vids... now I hope there will be vids on using that canned pumpkin. :) BTW I love that you include the value of canning. I keep seeing vids of people paying more to have home canned food than to buy it precanned from the store. That is crazy talk when it comes to budgets.

I agree about taking the economics of home canning into consideration. It's not always wise to can your own. I canned tomato paste this summer and filmed it to illustrate that point. (Several folks have requested that video over the years). Hopefully I'll find time to edit that video soon.

Every time I think I'll have time to catch my breath before something else comes in season for me to learn to can, I see something else that is in the grocery store ads that is typical for the time of year. That didn't make much sense but I realize this canning thing is 24/7/365. LOL! I think I'll probably kill myself having fun canning. But then the thought came to me that each time I can, I will not have to do EVERYTHING every year. Once I get a base of food canned, I can replenish as stores are somewhat depleted. As always, you teach us well. Thank you and Jesus bless.

so interesting how it is done in USA. in Europe we don't even have pressure canners.we just pour boiling hot water not 95C, not 98C but really boiling100C, and flip the jars upside down...called inversion canning. and the lids are boiled hot and 1 piece solid not 2 piece.

Have you ever tried canning neck pumpkins? Here in South Central PA, Amish country, we really like those for pies and breads. Lots of solid pumpkin flesh and a beautiful orange color.

I’m sure Bobby will agree! 😉 You can end the video with his reaction and smile. Some people say it does not make good pies, that you should use other types of winter squash for flavor.

We grow our own pumpkins. This is exactly how I canned mine. You should a video on making a pumpkin pie using yours. I haven't made one from ours yet. A lot of people say it's real watery even after draining it.

Sorry, you can only pressure can pumpkin. If I didn't have a pressure canner, I'd bake the pumpkin, scrape out the cooked pulp and freeze it.

A variety called "Strike". They are stringless, produce like mad and taste great. I think Bobby has a video on his channel about those green beans.

i peel them, steam them, mash them, then schmush it on teflon trays and dehydrate it.... after it's all crunchy, whiz it up in the blender and store in a jar. it's 1 part pumpkin to 4 parts boiling water, although i do give it a bit of a blend with a stick blender just to make sure there aren't any little bits..

It is okay to can apple butter because apples are acidic. It is recommended to can only as much as you can use within a year.

Why wouldn't you can a pumpkin if the skin isn't hard? I have used them although I haven't canned them just frozen or dried.

If you can sink your fingernail into the skin, the pumpkin isn't fully ripe.

@@imstillworkin I realized I worded that wrong. I knew you had to have a hard shell to keep pumpkins in a cellar for a long time but I didn't think it had anything to do with being ripe. The ones I put in the freezer were ripe and some of them were a bit soft. I knew if I left them they would be rotten. I am glad you showed me how to can pumpkin! I had read where you couldn't can pumpkin puree so I just freeze it or dry it. It is good to know about canning. I like that I can use it without have to to thaw or reconstitute.
