I've canned Sockeye salmon for years. I clean, debone (not the pin bones as they disintegrate) and skin the fish. I never leave the skin on. I never use salt and I never warm the lids as I'm cold packing the jars. I use an All American canner too and I love them so much better than the other brands that I've used with gaskets. Since I don't have the large bones and skin on my fish. I can in wide mouth jars and I can for 10 pounds of pressure for 90 minutes. All of the people in the campground can their fish the same way and none have ever had any problems. We also never reuse our lids. We are at sea level, so it is very important to check your locations and can accordingly. I'm always so thankful to have my canned salmon. You can do the same thing with many types of fish. I have canned, Dungeness crab, clams, cod, smoked halibut and smoked salmon. I get back home from fish camp and I'm just in time for the fall harvesting of veggies. I buy my veggie needs from farm markets. Hail to all the canners out there. This was a good video of how to can salmon in jars. I have also canned salmon in cans as well.

I've been canning salmon for over 30 years. Let me give you some advice you do not have to you sterilize those bands or boil those seals the pressure canner will do all that for you. you can save a lot of time by bypassing all that stuff. but anyhow good video!

Correct. Heating the lids only aims to soften the rubber to ensure better seal. No boiling/sterilizing needed.

This has been the most informative canning video I've watched. Easy peasy. My wife and I got 6 pints done. I need to look for a bigger cooker. One big fish makes quite a few jars. Your cooker looks extra fancy.

Never use metal implements, such as the butter knife she used as a debubbler, because it can potentially hit the jar and break it or nick the rim or even create a crack that will cause the jar to break in the canner.

There is no need to sterilize the jar or lids they will both sterilize during the canning process anyway. Besides, the fact you just wiped them with a non-sterilized towel. They can also touch the sides just not the bottom of the cooker.

Yeah. In a few of these how-to videos on pressure canning, that seems to get omitted. Unless you like broken or exploded jars in your canner.

You absolutely can! Since it is frozen, you can also cold smoke it before canning. Makes for a superb product!

@@justonemorecast steaming them and also having your hands properly washed and dried when you touch the steamed towel (they use this method at hotels, Spa, hospitals, even in some barbershop)

According to both All American web site (www.allamericancanner.com/All-American-Pressure-Canners.htm) and National Center for Home Food Preservation(nchfp.uga.edu/how/can_05/smoked_fish.html), pressure canners under 16qt capacity are not recommended for canning fish. The pressure canner you are using here is the All American Model 915, 15 qt capacity (same one I have). Could you please comment on this? I have contacted All American customer support with this question and the only answer I was able to get is: We can only recommend what is officially recommended... Something to do with heating up and cooling down times that are not good for canning fish. For some reason my Model 915 is not good enough for canning fish, but the next model up (Model 921) is ok? Does anyone know why this is? I have had my Model 915 for almost 4 years now and have canned various meats and fish with good results (I'm still alive).

Not recommended for canning SMOKED fish. Read the instructions. "AS RECOMMENDED BY THE USDA THE MODEL 910 AND 915 ARE NOT RECOMMENDED FOR CANNING SMOKED FISH BECAUSE THESE UNITS HEAT AND COOL TOO QUICKLY FOR SAFE PROCESSING OF SMOKED FISH. QUART JARS ARE NO LONGERRECOMMENDED BY THE USDA FOR SAFE PROCESSING."

You don't have to sterilize your jars for pressure canning. Everything gets sterilized during the pressure canning proccess. Sterilize the bands?! Never heard of anyone doing this, even for waterbath canning. And I see you have jars submerged completely in the water, You do not submerge the jars. The nottom layer of jars should not be sumberged more than halfway up the jars.

Very true about the water level. Read the canning manual. Don't need to sterilize anything when cold packing any kind of meat. As long as your jars are clean and you wipe down the rim (wiping down the lid is only to clear debris from the rim of the jar so the sealing lid will seal properly) and you also use new lids your good to go.

First- you don’t boil your lids because you can destroy the gasket. You don’t need to sterilize the band because it doesn’t come in contact with the food. You don’t ever use metal (knife) when canning. You don’t put a jar on top of another like she did. 🙄 she is not the person to follow when canning.
