You forgot a very important step. Once there’s a steady steam coming out you need to vent for 10 minutes before putting the rocker on. It assures all air is released from the canner before bringing it up to pressure.

Thanks for sharing. Always wanted to can some of my sockeye and chinook salmon. I might try first on some kokanee. Appreciate the step by step tutorial. Just need to buy a pressure canner.

Our favorite is Kokanee sandwiches. You can also make a Kokanee melt which is a grilled cheese sandwich with Kokanee and mayonnaise. Or it’s good on a fresh salad. I also like to drain the natural oil on my dogs food. It’s very mild and absolutely fantastic to eat just out of the jar. You can also make a spread with it for crackers and cheese goes good with a nice wine on a nice sunny afternoon with good friends!
