When using a wood cutting board or table you should always oil every surface. That prevents warping not putiing it on the side. Also you don't need to use as much as him. Because it is suggested to wipe any excess oil off after 15m and to let it dry for a day or two.

Old school ways were to wash with table salt and lemon juice. Between those two things, they will kill just about any germ. As for oil treatment, I prefer walnut oil. My main source is the Doctor's Woodshop. He is a chemist. My association with him is that I am a satisfied customer, and use his oil/wax mixture on all of the wood bowls I make. His story about the traditional use of mineral oil on the butcher blocks is that after cleaning the block at the end of the day, they would wipe it down with mineral oil. This would provide an impermeable surface barrier, so nothing, like germs would soak in overnight. In the morning, they would scrape the block down and start working again. The thing with mineral oil is that it never cures or hardens, so it soaks in and that is all it does. The walnut oils will do this, but it takes a week or so to cure. Bees wax is another addition to a lot of mixes for wood products that are intended for daily use. It is very soft and provides no protection for anything soaking into the wood since it is so soft. The Doc has carnuba wax added to his oil, which is very hard and offers a lot of protection. He suggests to use a heat gun for the final soaking. This lets the oil and wax penetrate in deeper. The walnut salad oils are not quite the same, and some work and some don't. I do stand my boards up on edge for drying after rinsing off over the sink. Some times metal stains can be removed or at least lightened by putting drops of concentrated lemon juice on them. Best if you can catch it right away. If it has been on for a while, it can take several applications. No, you can never sand them out....

Oils with saturated fats go rancid in contact with air - and the whole point of oiling and conditioning end grain boards / blocks is so you don’t have to wash them like this. using food grade mineral oil and conditioner creates a barrier that bacteria, stains and odours cannot pass. This care means you need only wipe a board down as the moisture won’t enter the wood, and once dry the bacteria have nothing to live in
@donovanhenry6613

IF you use soaps, use an extremely gentle soap that doesnt remove oils. Most woods are naturally anti bacterial and thus the soap isnt necessary. You can use instead a massively diluted bleach wash or a hydrogen peroxide. Personally, I've never used soap on my mesquite cutting boards. Just use, rinse with scrubber of choice and wipe dry. Stand to dry.
