Yumm! I’ve been making fried rice with leftover carnitas or pulled pork for a few years. I’ve tried it with leftover beef from tacos as well but carnitas always taste much better in fried rice. And can’t forget a side of queso fresco.

It’s bullshit bro. If You keep frying chips over low heat for more time they will get crunchy and also by covering them with corn flour adds crunchiness. You just showed your overnight process which is not time efficient.

i just cut fresh potatoes into fries, and put them into the deep fryer and then ya leave it in for 5 to 7 minutes and then it is perfect enough for me, and they are crunchy too then cover them with some spices then badabim badaboom perfect

Burger looks great. I've never tried grilling mustard on the bun. Love the science on the beef/onions/moisture. Where do your patties weigh in? I usually go 100 grams. My partner of 31 years says I make the best grilled cheese in the world (restaurants are usually a disappointment). I like your technique, and attention to detail (especially the way you opened the video--hilarious). With all the ingredients being a given, the secret to making an epic grilled cheese is love. You have to give the sandwich time and love to develop the GBD crust deep into the sandwich. Killer butcher block!

This rice looks amazing. I'm not as good as a Mexican cook as you are, but I'm surprised you didn't grind and toast the spices separately (as you did with the guajillo chiles) and cook them in the fat first. Must not be necessary to get the flavor. I've never heard of Mexican Fried Rice, but it looks crazy good, and I can't wait to try the egg yolk. This is a main dish and not a side dish. How did you end up in Seattle? I lived there for years and loved it (now in Phoenix--gotta have my sunshine).
