@@MultiBomb Not as bad as my first day but i'm still relatively terrible. If i am bringing a soup the plate will definitely bw dirty on the sides especially since we have this really complicated soup that is filled almost to the top wuth a tiny piece of bread on top that barely holds on to the plate.. Other than that i can now carry it confidently if it's not very heavy, if it is i use my right hand as assistance. Anyways being a food runner is not much about bringing the food out at all.. Mostly i wipe plates, glasses, cotlary, etc.. I hate this job but it is what it is 🙃🙃🙃

Excellent video as always! It has been a true honor to follow and learn from your tutorials, and I was wondering if you could cover some more topics regarding the waiters in the Cafe section. I'm currently working in a very busy downtown Cafe and it's a preseason here, and I'm not really good with balancing and carrying a lot of drinks, such as multiple cups of coffee with cup trays with glasses of water for each and bottles for beverages (it's coffee madness in the morning), as I often see myself carrying around 2-3 table orders, usually around 3 people at each table, because there is always someone sitting down every minute, and all we have is a usual, waiter's tray for drinks that isn't even covered with with rubber to prevent sliding of drinks on the tray, so my question is: Could you make a video about covering tray and beverage carrying and balancing in depth, as I have a lot of problems carrying super heavy trays and balancing the beverages on it, as I know you are very experienced and skilled seasoned waiter. I know you focus mostly on the restaurant part, but I think this will help a lot of new waiters like myself who found themselves in the middle of the pre-summer season hell. I know the stuff I ask are pure basics, stuff waiters should be learned or taught from the beginning, but my colleagues are always super busy themselves, and we are always working with only one waiter and one barista each shift. (Plus waiters have to climb all the way to the first floor of the building to give the drink orders to barista, and carry everything down very narrow stairs in the downtown walkway where we have our tables set, so balancing and delivery is extra hard.) I apologize if you already covered in a video, since I did not watch all of the videos, just most of them. Covering these parts would be of much help to a lot of beginners I think, thank you very much for your time in advance :)

Yes when he demonstrated that the fork fell off of the plate on to the table I have that happen often when I'm cleaning tables like sometimes some people put napkins on the plates and sometimes I'm not aware of the silverware that is underneath the napkin and when I go to grab the plate it'll tilt a little bit and if some silverware is underneath there it'll slide right out on the floor👍

We use large round trays at my restaurant. I was told to not put my palm flat against the tray because that causes slippage, but rather grip it a little bit with the finger tips. Is this what you would recommend also? I have found that carrying trays puts strain on my wrist.

This is correct! Don't hold your palm flat on the tray! Leave a space so it has a cussion against the baunce when you walk!

My restaurant requires us to use these for all food. I am new and still struggling unloading these large trays, because we have no tray jacks. Any tips for unloading 4+ entree plates from a large tray like this on a table?

Catboi, there is no advice here! I have done that and it is very hard because the plates slide and you can create such a mess...! When you do that you have no margin for mistakes so ...very slow and very carefully! I can't tell you anything else!

It depends how many plates you have to put on it, do you put also bottles and glasses and many other things! If I have to carry only plates I use a triangle form it I carry three plates or square if they are four and they can fit all separate on the tray! But I can also stack it, if there are more plates and so on and so on. YOu will figure it out with experience!

Good question. In some countries they teach you in school that a waiter must carry the tray with left hand. For me this is wrong unless it is a food tray from which we serve the food with fork and spoon directly into the plates of the guest( English, Russian service) If we are talking about a tray with plates that you carry to the table I have always used my strong hand(right hand) and in USA this is the accepted way!

Like I noticed this one woman had a plate and it had a napkin laid over the top of it so I asked her is it okay if I take that out of her way she said yeah go ahead and I didn't realize there was a big pile of ranch dressing on the plate with forks and spoons between the napkin and dish plate and the silverware had a bunch of ranch dressing on it and when it hit the table the ranch dressing bounced off of the fork on the table and made a little mess not big but it was big enough to have to go wipe the table😂

There are different restaurants and different managers, Eti! I have worked with managers who have no idea what manager means. We as a waiters have to follow the system and the instructions from the management. It is their business, their responsibility. NO big deal if we are not allowed to use trays!

I am working in Austria at the moment but I like to move around! We had the same problem at the restaurant I am working right now, because some waiters have dropped trays with food and the chef was absolutely against serving with trays! 4 runners running like idiots for every table! I changed that and now we use those people much more for service helping us up front than running with two plates all night long!

Very good point Burje! You will find out that a lot of restaurants don't allow tray service exactly because of this! Not only you lose money because someone has dropped the tray with the food on the floor but for the kitchen to prepare the food again while working on the next orders is a nightmare! So good point! You have to train your staff really well in order to implement this!

The first thing you should do is go to the free online course and complete it so you have a certificate at least! It is all free! Then get any job in any restaurant with the agreement that they will give you a chance to become a waiter when they see how hard you work and how good you are with the guests! This is the path! It won't be easy but it could be done! Once you get some experience in your country you can start looking for an international job! It doesn't work another way! Good luck! You can create your profile on the Waiters Network and who knows, maybe a company will need a newby and call you for a job! You have to try everything!

Hi Pham, good luck with the job! I don't have any special advice since you will be trainee and you will learn now everything from scratch! It is great that you have come here looking for knowledge! Maybe you should watch the banquet video (if you haven't already) to be familiar with the mirror service! Other than that be prepared to work long hours, to move tables and chairs and all kind of equipment around the hotel! It is the beginning for you but it is a great opportunity if you take this job seriously!

Dimitris, no it is not wrong! Especially a drink tray you should carry it with your fingers if you feel comfortable! The large food tray is much harder to carry with your fingers but if you can do it, go for it!

I've been working 6 months as an assistant waiter at a restaurant, without prior experience, and I've learned to carry the food tray, which is quite heavy, on my finger tips. But lately a colleague told me it's the wrong way cause I will hurt my back. I don't feel like I'm hurting my back since my body position is straight. Although I wanted to know if it looks unprofessional to hold a food tray on your finger tips. Thanks again for replying. :)

Dimitris Theodoridis , the only thing you can hurt is your finger, since the trays are usually really heavy! I always recommend more style in anything we do, so if you can carry it like that do it, it is good impression!

You can use fingers carrying a tray only if you have lighter load, but with a heavy load like its so dangerous, accident may happen anytime, he is doing the correct way of carrying tray.

hello there and thank you for the video where i work, you have food and drinks ect on the tray BUT you have to unload it while you are carrying it. you don't put it on any stand or so first. and if you have for example 4 orders on one tray, you may have to unload drinks and food from different places of tray, not as you would like it but as the order says. so how do you do that? because if i hold the tray with my palm i simply CANNOT unload while still holding it. so i use my fingertips but it's too much weight and balance for a 57kg girl and after 3 weeks my fingers hurt really bad

Hi Demi, thank you for the question. There are places where tray service is not popular and then off course if you want to use the tray they don't have tray jack...and it is complicated, but you say that in your restaurant using tray is a common practice or even a MUST and you still don't have tray jacks!!!! That is completely insane! Does the management tells you that you should be able to serve plates and drinks from a food tray while holding it with your left hand? If that is the case I have nothing good to say about your managers :) but let be civilized and I would suggest that you ask them to provide tray jacks. Explain for them that the whole world is working with trays and tray jacks and that this is not only for your own good but for the good of you guests too! It is dangerous practice and I am myself avoiding it as much as possible! You can learn and do it but it is really difficult, take a lot of time and as I said it is dangerous! Second thing I will suggest to you is never to carry drinks and food on the same tray! that makes the situation even more complicated ... I can probably show you how to serve from the tray carrying it with your left palm but no restaurant should apply such a practice on first place anyway. it is better if you try to explain to your bosses that providing a tray jacks will make the service look more professional, not to mention faster and safer! Honestly, if i show your answer to ANY greek employer, he would laugh his guts out!!!! And i am so not offending you right now. My logic of course agrees with what you are saying and from what i've read online, everywhere there is this tray jack suggested. BUT let me tell you something about the greek way of service ! There are NOWHERE tray jacks and we are OBLIGATED to serve while holding the tray ! And many times in an order that is not helping balancing at all! i am a girl and i have to carry a big tray with maybe 4-5 orders for different tables and i have to serve WHILE holding the tray, and without order. my first order may be in the middle, my second on the outer corner of the tray. i swear to god! and i am honestly telling you, i've been working since 16years old, my employer is amazing ! this is the greek reality. we always serve this way. so i guess we're crazy! and not only we serve this way, but MANY people are looking for even weirdest ways to hold the tray, just to show off, to make an impression!!!!! if you'd make a video on how to serve while holding the tray i would be really really grateful. i am doing it already, but my thumb and small finger hurt so bad i cant get out of bed using my hand. thank u so much for your answer

Carlo Delarosa, it is normal to feel nervous. It will probably go just fine though. Off course there will be mistakes and confusions but this is part of the game. Stay positive and concentrate. Everything else will fall in place with time. Good luck!
