I use chicken liver but mix it with vinegar and garlic powder and onion powder and I let marinated over night the vinegar makes the chicken liver tougher

Wish I'd seen this sooner. Several things to note. The pectoral fins also have that painful spine sticking out so to avoid them, hold the mouth of the fish in the palm of your hand and hook your first two fingers around the pectoral fins. This will give you a good grip as you start the process. You're wasting half the meat by cutting off the head and throwing it away. There's some beautiful muscle under the chin. With a sharp knife, make a cut only skin deep around the head, behind the pectoral fins, then angle up under the chin in a "V" to the center of the lower lip. The skin is loose here so you can grab it with pliers and zip all the skin right off. All that muscle under the chin is now visible and easy to pull loose with your fingers and you can see how much more meat is now on the fillet that you would have thrown out. Free the meat on either side of the spine behind the head with your knife just to a point behind the dorsal fin and down the first few ribs. Put your thumb underneath and crack the backbone right behind the dorsal fin and pull off the head with all the guts. Sometimes you will see the white spinal cord sticking out through the backbone. Just for fun, give it a little tug with your pliers and the tail will flap back and forth. Bullhead also have cheeks like walleye that you can cut out and skin anytime in the cleaning process. That's how you get all the meat from a bullhead. By the way, I'm the only one I know who does it this way, self-taught. Also, if you plan to separate the fillets from the ribs and backbone before cooking, be aware that bullhead ribs are different from other fish. There is meat on the inside of the ribs that you will lose if you don't first free it up with your knife before cutting down the outside of the ribs. Nothing like Spring bullhead in the Adks.
