I'm also a displaced Brit however, I'm way over the other side of the pond on the Pacific Northwest coast of Southern Oregon and since moving here 14 years ago the local way of fishing and filleting has become the norm now. We bleed the fish straight away, ling cod ( Not member of cod family), black rock fish and all of the many varieties of rock fish, salmon, tuna, halibut, we tend to (apart from the tuna), fillet when we get in to port. With a razor sharp fillet knife, start at the head and cut down to spine, following spine to tail. Cut across from head cut at an angle to anus. Cut carefully down from original cut to rib cage, then follow along back until end of ribs. Cut down to other side of anus and then cut whole fillet back to tail. Most locals then flip the fillet over and gently cut between flesh and skin to remove the skin. Repeat on other side of fish. Once you've got your fillets, tidy up by feeling for the pin bones, then cutting them out in a strip. After their deboned, cut fillets to eating or smoking size. Tuna is a job best done following day with the rest of the tuna fishermen. These are albacore tuna and were allowed to catch 25 a day per person. Normally 8 or 10 is enough, if only for the amount of time it takes to clean them. Just about all of the fish carcasses still have the guts intact. We use them for our crab pots, so they don't go to waste.

in my opinion u need first to stun the fish, and after this just cut throat. its less painful to this fish

I used to do this. Then I started fishing with nets and there are 1000s of them

I think there a better ways to handle/ kill the fish.
